hmmmm CHEESY CHEESE FRIES..?

Why do cheese fries get soggy after a wile.. whats the best cheese to get?

All cheese is going to make it like that because the cheese is hot and soggyish.
So, just buy the cheese you like and make sure the fries are extra crispy.

The oil from the cheese absorbs into the fries.

Depends on your taste as to what cheese to use. Try Velveeta, cheese spread, melted cheddar, etc -- you have to come up with your own taste.

PS -- Velveeta for example does not contain the 'oil' that regular cheese does.
