Slice it and saute it with onions in olive oil.
Serve over linguine or spaghetti.

This realy depends on what kind of squash it is.

If it is a summer squash (it has white flesh) I would recomend sliceing it up and sauteing it with garlic and olive oul and serving it over your favorite type of cooked pasta. These include Zuccini, Summer Squash, Patty-Pan Squash. and a number of others.

If it is winter squash (has hellow or orange flesh), I would recomend useing it as a desert. Cut it in half legth wise (works especialy well with butternut swash). Remove the seeds. Make several holes in the flesh useing a fork (being careful not to puncture the skin). Sprinkle the desired amount of brown sugar over the two halves and add butter (to taste). Bake untill the flesh is tender. You can also make winter a winter quash soup, but I am not sure that you have time to do it. Winter squash includes Butternut, Acorn, and many more.

Cut it into slices, then saute it in a blend of butter, salt, and pepper.

Slice longwise, and put into a lasagna.

Slice longwise, grill. Do the same with some zucchini and some eggplant, if you are feeling adventerous. I'm not, so warn the person so they can pull the eggplant out. Top with greens, bean sprouts, goat cheese, and wrap in a tortilla. Serve with a nice vinegar oil blend.

Use it like a mr potato head and hope your girlfriend has a sense of humor.

Two words. Squash bread. Sub in squash for zucchini bread.

Puree it, add cream. Squash soup! Best if served with large amounts of alchohol.

Good luck!

Help to know what kind of squash you're dealing with. Zucchini can be eaten raw or steam it with some tomatoes, onions & basil. Yellow squash same thing; some mix it with zucchini too. If you have winter squash (acorn, butternut, spagetti) you can bake it. "Nuke it" or bake whole for a while to "tenderize" before cutting in half. Scoop seeds out & add some butter before returning to oven. On spagetti, you scoop out the "meat" & use like pasta.

Cut squash in half, rake out the center seeds.
Poke holes around inside so melting will move into the meat.
Place 1 tablespoon butter in center, and half fill with brown sugar.
Sprinkle with a little salt, and place cut side up in oven on center rack for about half hour to 45 minutes at 350.

Here you go...I love squash (every kind!!) and these recipes are really good and easy!!

Baked Squash Rings
Recipe courtesy Kathleen Daelemans

1 medium butternut squash
1 medium acorn squash
Coarse grain salt and freshly ground black pepper
Olive oil

Preheat oven to 400 degrees F.
Peel the squash. Cut each squash lengthwise and scoop out the seeds. Cut each squash crosswise into half moons.
Sprinkle with salt and pepper and brush with a thin coat of olive oil.
Lay squash on a cookie sheet and bake for 25 to 30 minutes, turning once, or until tender to the touch and golden.

TIP: You don't have to peel the squash. If you don't have a super sharp carrot peeler, don't bother trying to peel it. Sometimes the skins taste declicious!

----------

Roasted Squash and Asparagus
Recipe courtesy Kathleen Daelemans

2 1 /2 pounds acorn and butternut squash (whatever kinds of squash are available), seeded and cut into 1/2-inch rings
2 teaspoons olive oil
Coarse grained salt and cracked black pepper
1 bunch asparagus, cleaned

Preheat oven to 450 degrees F.
Place squash rings in a plastic bag with olive oil, salt and pepper. Shake until well coated. Place on a baking sheet in a single layer. Cook, turning once until squash is softened and almost cooked through, about 25 minutes. About halfway through cooking, add the asparagus and continue roasting until all are tender.

----------

I like to sprinkle brown sugar and cinnamon on the inside of the squash and bake it.

I also like to cut it into chunks and cut apples into chunks and steam them together.

Good luck!!

If you talking about butternut squash.....cut in half, boil for about half an hour..............cool and then scoop out the flesh.

Fry some bacon, add salt and pepper, grate piles of cheese, mix with the flesh that you scooped out and return it to the casings and bake for an hour at gas mark 6. Serve with salad.
