I've seen some pictures of nice cakes garnished with a lemon peel on the top of the cake. My question is, how do I make that twirl?

Here's a picture of what I'm talking about. I know it's kind of small.

Sometimes it's possible to shape your rind in ice water and when you remove it it retains it's shape. Just let it dry out a bit before placing it on top of the cake. Another way is to make sure that your strip is very thin and long, while peeling it twist it.

After you get the peel, wrap it around a straw or bar spoon and dunk in ice water while holding it in place. It only takes a few seconds. The spiral will slide right off.

You need a zester that also has a side cutter for 'twists'. You just cut in a continuous spiral around the lemon/lime/orange etc.
