Mozzarella In Carrozza (or less fancy, Mozzarella In A Carriage)
The fastest and most comforting thing you can make in seconds!

For 2 person you'll need :

6 slices white bread, crusts removed
1 ball mozzarella, cut into slices
shop bought Bolognese sauce (or homemade if you got any)
125ml full fat milk
3 heaped tablespoons plain flour
1 egg
salt and pepper
olive oil (not extra virgin) for frying

Spread the bread slices with the sauce and sandwich the cheese with them. Sealed the edges so that the cheese are secure in the interior part of the bread, using your fingers. Take out three plates for each the milk, flour and egg. Beat the egg and season with salt and pepper. Heat the oil in a non stick pan and you can start with the dunking process. Lightly coat the sandwiches with the milk (dont over do it or the bread will absorb the liquid and turn the sandwiches into mush) then in to the flour, then the egg and into the pan. Fry one side for a minute or two on a medium heat flame and turn. It will turn slightly crispy but not crunchy. Then place on paper towels.

Cut in diognal and serve warm. So good, especially when its cold outside.

Good luck!

I would like to thank Domestic Goddess herself Nigella Lawson for the recipe. Taken from her book, Nigella Bites.

My fave quick meal is a vegetarian taco salad. Even if you're not a veggie, the fake meat is quick and tastes good (trust me, I'm a picky eater, and Morningstar Farm Grillers recipe crumbles are good in tacos!). You just put the 'meat' in the skillet with a little water, add some taco seasoning and cook until 'meat' is unthawed and water is dethawed. I don't follow the 'recipe', I eyeball it. While the taco filling is cooking, crumble some tortilla chips in a bowl, add some salad (or not) and then top with 'meat', cheese, and taco sauce/salsa with a dab of ranch dressing(or not)! MMMMMM...making me hungry right now!

Cube steak (also called minute steak) Sprinkle both sides with salt, pepper, and garlic powder, splash with worchesteshire sauce and fry quickly. Takes about 5 min. Usually have tater tots and a green salad with it.
For variety, split a roll, make garlic toast with it, and put your cube steak on it as a sandwich, with or without cheese. (I like pepper jack) Toss a salad and you're done.

Alfredo sauce: (In my magic Bullet or blender):

Pamasean cheese (if you get the brick, it has the best taste and cut it into cubes before you drop it in.)
olive oil
cream
oregano

Blend it up, heat in the microwave and pour over pasta.

You don't need the measurements (which is what saves me time) just practice it a couple of times and change the recipe by eye to suit your taste.
