The best recipe is the simplest I think. Put your saurkraut in a casserole dish and lay the sausages on top. Cover with foil and bake for 2-3 hours at about 350. Then uncover and let sit for a few minutes. Boil a tater or two and enjoy!
My dad used to smoke our meats and we made our own saurkraut. Boy was that good. If you can, find an organic butcher and do the same recipe only substitute boneless pork chops. YUM!!!

The key is good Sour Kraut! Are you asking for recipes to make the Kraut yourself?
Just find a brand of Kraut you love and use good quality sausage and you are in business!

I never use an actual recipe. I just drain the kraut, put in a shallow pan, add a little chopped onion and apple and a splash of white wine. Lay the sausage on top and pop it in the oven for about 30 minutes. (Longer if you want it drier)

Erzs's™ Weinkraut mit Ãpfeln
Serves 6 side dishes
4c. drained sauerkraut from 2 lb. pkg sauerkraut (not canned)
1 Granny Smith apple
1 McIntosh apple
3T unsalted butter
1c. finely chopped shallots (I used onions too)
1c. finely chopped onion
2 slices bacon, chopped
1c dry Riesling (I used dry Chardonnay)
1c. chicken broth
3t. dry thyme
5 juniper berries
1 bay leaf
2 c heavy cream
3T apple Schnapps
1t salt
1t black pepper
2 lbs of your favorite German sausage
Cover kraut with cold water and soak for 5 minutes, drain in colander, repeat and press out as much moisture as you can.
Preheat oven to 325 F.
Peel and core apples, cut into ¼ in. pieces.
Cook onions and shallots in butter in 4-5 qt. pot over moderate heat, 8-10 min. until soft
Add apples, bacon, wine, broth, thyme, juniper berries and bring to simmer, and stir in kraut. Cover pot with foil and braise in oven until tender, 1-1 ½ hours (I just cooked it on low on the stove with a lid, stirring on occasion, for an hour.
Discard bay leaf.
Simmer cream and schnapps in 2 qt saucepan until reduced to about 1 cup (I just stirred in the milk, sour cream and cognac together and mixed it in the kraut at the end).
Add salt and pepper to taste.
I also add the wurst in at the end and simmered for 10 minutes to heat.
