Sour cream and cheese!!
My mother-in-law actually adds mustard and sour cream...I know it sounds gross...I thought so too..then I tried them...they are soooo good!!

Hello.
Let me tell you what I like to do.
I dont like to eat the same stuff over and over every week so I like to vary meals a lot.
Here are some options I use
1- Boil the potatoes and mash them adding about 50 grs of butter per kg of potatoes (aprox, not straight meassure), then half cup of cream and some mustard. If the mustard is spicy I add only a little bit because I have kids that eat the mashed potatoes too, if it is a sweet mustard I add a bit more.
2- I boil the potatoes and mash them same as in the first case and I add a little bit of butter, half cup of cream cheese ( I use soft flavor cream cheese, but you can add any you like). Sometimes I use smoked flavor cream cheese, I am not sure if you can find that variety there, but it gives awesome flavor. I also add herbs (mostly fresh but you can use dry too).
3- Sometimes I mash the potatoes, i add butter and milk to soften them and then I add two eggs, parmiggiano cheese and a little pepper, sometimes i add herbs to this too, mostly parsley or coriander.
4- you can also add a little bit of heavy cream, ciboulette and ginger
5- you may add mashed bacon/ham crust which you easily make by placing slices of ham or bacon on an oven plate slightly greased and leaving them in a soft oven for 45 mins or until dry (you can do this after you cook something else in the oven and keep them in an airtight container - glass jar or whatever you have- and inside your fridge. They last for 4 or 5 days. Well once they are dry, you can process them in electric mixer or just use your knife to cut it down in small pieces.
These are good to mix with green salads by the way.
Be careful if you use this to add to your mashed potatoes. They contain some salt already which is a little bit more concentrated after drying process. So use less salt in your potatoes if you intend to add this to your mashed potatoes.

Sour cream, grilled onions, scallions, if you like curry, add a little curry powder. Sage is good and Rosemary. Almost any kind of spice you can imagine. I have even added cinnamon and jack cheese, don't knock it till you've tried it.
