I'm in Americorps too. Do you need to set up a project with your site? My project site is near a university, so we are partnering up with them and local events. I work with kids, so we are taking the kids to community MLK Day events. Then we are having a 'party' to celebrate MLK's birthday. If you are only looking for a volunteer opportunity on that day, look up any United Way agency.

You might want to work with your local Hands On Network affiliate. Most of the Hands On affiliates are doing special service projects for MLK day.

Your local affiliate is Chicago Cares, and their website can be found at:

http://www.chicagocares.org/

Not sure if you're near the Chicago area, but you can look for other projects through other affiliates at:
http://www.handsonnetwork.org/our-network

or through the Points of Light Foundation at:
http://pointsoflight.org/centers/find_center.cfm

I see that the MLK project in Chicago is past the registration date, but you might want to check in with the organization anyway. Perhaps they will need additional assistance with coordination of the project.

The other option is to check in with your local United Way chapter at:

http://national.unitedway.org

Good luck!
