I miss the semolina we had at school. Always had a nice firm skin on it and lumps of half-baked powder which 'exploded' like puffy balls in your mouth. I used to stir jam in it and turn it pink.
Mr. GorgeousFluffpot, on the other hand, almost throws up when I mention this as he HATES semolina.
Do you like it? Or is it just me? And does it taste better with skin and lumps?
Semolina-lovers - tell me please!

What a delightful question! The skin and lumps make the dish--it wouldn't be the same if it was all smooth and creamy. The skin-and lumps version was probably invented when someone had a lot of people to feed and not much time to prepare something. Who knew how fabulous it would turn out? Happy eating!

Typically hard durum wheat which has been ground into flour. The resulting product is high in gluten and is used for making pasta and breads. Semolina is available in coarse or fine texture flour. If you like the coarse texture you can find it at bulk food stores or on-line at bullkfoods.com
