looking for things to add to instant pancake mix for a little twist for my family tonight. thanks.

A pancake that's not only a teatime treat but is equally delicious fried with bacon and egg for breakfast, if you manage to have any left over. Scotch Pancakes are also known as Drop Scones Half an ounce (15g) butter,1tbsp milk,1tbsp glolden syrup,6oz (175g) plain flour,1tsp cream of tartar,2tsp baking powder,1 egg,quarter pint (150ml) milk,1oz (25g) caster sugar,pinch of salt Directions: Place the syrup, butter and 1tbsp of milk into a small pan, heat gently until ingredients are melted then leave to cool Sift the dry ingredients together in a mixing bowl then make a well in the center Add the egg, melted ingredients and half the milk before using a spoon to mix into a thick batter Stir in the remaining milk, beat for a couple of minutes until the batter has a thick coating consistency Stand for 15 minutes Lightly grease a griddle or heavy based frying pan warmed over a medium heat Drop tablespoons of the batter onto the pan of griddle and cook until bubbles rise to the surface and burst. Turn the pancakes over with a palette knife and continue cooking until golden brown. When the pancakes are cooked. Place them between two clean tea-towels on a wire rack. Serve buttered and top with syrup or jam, deeeeeelish!!

Blueberry Gingerbread Pancakes

Ingredients:

2 cups flour
1 1/2 teaspoons baking powder
1 1/4 teaspoons ground ginger
3/4 teaspoons pumpkin pie spice
1/4 teaspoons baking soda
1/4 teaspoons salt
3/4 cup light molasses
3/4 cup buttermilk
2 eggs
3 tablespoons vegetable oil
2 cups blueberries
additional vegetable oil
butter and maple syrup

Preparation:

Mix first six dry ingredients in medium bowl and blend well.

In a large bowl, whisk molasses, buttermilk, eggs and 3 tablespoons vegetable oil. Add dry ingredients and whisk just until smooth. Fold in blueberries.

Brush nonstick skillet with vegetable oil. Allow 3 tablespoons batter for each pancake. Cook about a minute and a half on each side. Keep warm in 200 degree oven. Serve with butter and maple syrup.

I like to add about a tsp of cinnamon for every two cups of mix.

I also like to make a strawberry syrup:

1 cup sugar
1/2 water

Boil this until it thickens a little, and then add 2 pounds sliced strawberries. Cook for about 5 more, and store in the fridge.

My favorite for breakfast is adding banana slices or blueberries. If you are looking for more 'savory' fare, you might consider adding shredded zucchini, shredded or finely chopped onion and a sprinkling of cheddar cheese. Mix together and cook. These are sooo good. I top with sour cream and chopped tomatoes or a simple brown gravy, although a cream of mushroom soup thinned down might be good over top as well. I have these often in the summer with just a good salad and iced tea. Enjoy!

Add banana slices and walnuts in a frying pan with butter until the bananas are golden brown.

Spoon over pancakes and drizzle with honey instead of maple syrup.

Ah good question! Add a little more baking powder for extra fluffiness and about 2 tsp vanilla. You can also throw in a little cinnamon/nutmeg for a nice touch. Be fancy and make 'em into shapes for the kids! Enjoy!

Banana's sliced very thin, or a tablespoon (per pancake) of blueberries or sprinkle some cinnamon on the cakes once they are formed.

You could make something similar to crepes. Just add a little extra milk to the batter.

I happen to love cheddar cheese and apples. Add them to the batter last. (Cheese, apples and maple syrup taste good together.) You'll also get a more complete and nutritious meal by adding both cheese and apples.

If it's for dinner I'd suggest adding some chopped up spinach (drain it really well if using frozen!!) then melt some cheddar cheese on top of them. Yum!
And for an extra touch serve with a side of bacon. Delicious!

Add one banana for every 2 people you are cooking for. blend in the blender with a little milk and cinnamon. add to batter and see if you need anymore milk. YUM!! It is kinda like banana bread only better.
