My husband is from Mexico, and would be thrilled if I knew how to make more authentic dishes. But he is a terrible cook, so I have to figure it out on my own. I would love ANYTHING (except mole), but I would especially like a taco recipe, a torta recipe, or a homemade flan recipe. Thanks in advance!

I've asked his mother and she's given me a few, but she doesn't have anything in "recipe form". She knows what the portions look like, but can't tell me exact measurements... which makes it a bit harder for some dishes.

flan

1 cup white sugar
3 eggs
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 tablespoon vanilla extract

Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside.
In a large bowl, beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish. Cover with aluminum foil.
Bake in preheated oven 60 minutes. Let cool completely.
To serve, carefully invert on serving plate with edges when completely cool.

Prepare this very spicy mix for him. One can jalapeno peppers (with its water), 3 cloves of garlic, one chipotle pepper, olive oil to thin the sauce, pepper and a pinch of salt. It goes with anything mexican and even other things you like to spice up.

If you like guacamole with chips then: Peel and mash one avocado with a fork. Add chopped tomato, onion, fresh parsley, garlic and a bit of olive oil. Top with grated quesadilla cheese.
