I was told 18 inches between the countertop and bottom of wall cabinets

18" to 24" is the standard for what we install. We do a lot of custom work so let me make a suggestion since it sounds like you're doing custom work. What is the height of the counter-top? For many of my clients I've raised the height to 40"+. If you're above 5'8" then you might be more comfortable working at a higher counter since standard is 36".

This would make the height of the bottom of the cabinets raise up with respect to the floor also. Think about taking the cabinets all the way to the ceiling for more useful space.
