Recipe:
Boil elbow pasta. Strain. Nuke 2 (12 oz.) cans evaporated milk & 1 cup chicken broth. Meanwhile, melt 3 tbs. butter into empty pasta pot. Mix in 1/3 cup flour and the milk mixture, until thick & bubbly. Whisk in 1 1/2 tbs. dijon mustard, 1/2 cup grated parmesean, and pepper. Stir in 1 pound extra sharp cheddar cheese. Add pasta and mix over heat.

Yesterday I made a chicken dish, I found from 30 Minute Meals and it was SO good. The recipe was on the FoodTV website, and it was called Parmesan Crusted Chicken. Basically all you do is coat chicken breast in parmesan cheese, and put them in a fry pan with just a small dash of oil. Cook for about 5-8 minutes per side, until cooked through. The cheese gets brown and crispy in parts, and still soft and cheesey in the middle. It was SO good. The recipe recommends serving it with sliced or chunky style tomtatos on top, and with roasted potatoes and onions. It was worth a try; really very easy and everyone loved it!

Easy Chicken Bake
Recipe
1 pkg (6 oz) Stove Top Stuffing Mix for Chicken
1-1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 can (10-3/4 oz) condensed cream of chicken soup
1/3 cup sour cream
1 bag (16 oz) frozen mixed vegetables, thawed, drained
Preheat oven to 400°F. Prepare stuffing mix as directed on package; set aside.
Mix chicken, soup, sour cream and vegetables in 13x9-inch baking dish; top with the stuffing.
Bake 30 min or until chicken is cooked through.

Easy Mexican Chicken and Rice
* 1 cup converted rice
* 1 2/3 cups chicken broth
* 1/2 cup chopped onion
* 1/2 teaspoon salt, or to taste
* 4 boneless chicken breast halves
* 1 cup chunky salsa
In a large pan, bring chicken broth to a boil. Add rice, onions and salt; boil 10 minutes then remove from the heat. Place in lightly buttered casserole dish, place chicken breasts on top and pour salsa over the chicken breasts and rice. Cover tightly and bake at 350° for 45 to 55 minutes.

I do this a lot:
Brown 1Lb. ground beef, drain, then add 3 cans of Cambell's Beefy mushroom soup.Stir occasionally. Cook 4 or 6 servings of instant rice while meat mixture is simmering. When rice is done, add to meat mix and serve hot with a vegetable. YUM!
