CHICKEN CHOW MEIN
Serves 4

-1/4 c. vegetable oil
-1 tsp. salt
-1/4 tsp. pepper
-2 c. cabbage, sliced
-3 c. celery, thinly sliced
-1 (1 lb.) can bean sprouts, drained
-1 (4 oz.) can water chestnuts
-2 tsp. sugar
-2 c. chicken broth
-2 1/2 tsp. cornstarch
-1/4 c. water
-1/4 c. soy sauce
-2 c. chicken, cooked & sliced
-Rice or chow mein noodles

Method:-
1) Heat oil, salt and pepper in deep skillet.
2) Add cabbage, celery, bean sprouts, water chestnuts and sugar.
3) Stir in chicken broth; cook about 10 minutes.
4) Mix cornstarch, water and soy sauce; add vegetable mixture. 5) Stir until mixture thickens.
6) Add meat and heat through.
7) Serve over hot chow mein noodles.

1/2 pound fresh egg noodles
1 can bamboo shoots
1 can water chestnuts
1/2 red bell pepper
1 cup fresh snow peas
2 celery stalks
2 slices ginger
2 TB dark soy sauce
1 teaspoon sugar
1 TB Chinese rice vinegar
1 cup mung bean sprouts
2 tablespoons oil for stir-frying, or as needed
PREPARATION:
Blanch the noodles in boiling water for 3 - 5 minutes, or cook according to the package directions.
Prepare the vegetables: Rinse all the vegetables and drain thoroughly. (Rinse the bamboo shoots and canned water chestnuts under warm running water for several minutes to remove any tinny taste).

Cut the red bell pepper in half, remove the seeds, and cut into thin strips. String the snow peas and cut the celery into thin strips on the diagonal Mince the ginger.
Heat the wok and add 2 tablespoons oil. When the oil is hot, add the minced ginger and stir-fry briefly until aromatic.
Add the water chestnuts. Stir-fry briefly, and add the other vegetables except for the mung bean sprouts. Stir-fry briefly and add the noodles.
Stir in the dark soy sauce, sugar, and rice vinegar. Stir in the bean sprouts. Cook for a few more seconds and serve hot.
Each serving contains (based on 3 servings): Calories 469*, 76 g Carbohydrates, 16 g Protein, 13 g Fat (2 g Saturated Fat), 72 mg Cholesterol, 8 g Fibre, 907 mg Potassium. An excellent source of potassium. A good source of calcium, iron and dietary fiber.
*The calorie count goes down to 352 when based on 4 servings.

You're not a cannibal, are you? Chow-Men? (Or, is that how it is supposed to really be spelled?) Just curious.

Anyway: The secret is in the sauce; Use "chow-mein" noodles (obviously) Chopped vegetables of your choosing, i.e. cabbage, green onions, white or yellow onions, etc. You want to make sure that you use "Peanut Oil" to sautee' the noodles, once they are boiled to desired tenderness/softness. Then mix in a combination of "Golden Soy Sauce" "Thin" or "White" Soy Sauce" and "touch" of "Black Soy Sauce".

Taste as you go, and add the sauces slowly as you continue to mix and taste. You can always add more sauce, but you cant take out "TOO MUCH" sauce.

Personalize your chow mein. Add the things you like and leave out the things you don't. There is no set rule, on what you "have" to have as ingredients.
But... the keys to success are the Peanut Oil and the different soy sauces that I mentioned above.

ALL THESE INGREDIENTS HAVE TO BE HOT at the same FOR IT TO BE PERFECT!
Thus you have to have a few pots and pans going on your oven or use a microwave for some ingredients if you cant keep track of it all.

1. Take your noodles, then add pepperica

2. quick stem it

3. Add corn, better to blend it

4. add cut boiled eggs

5. Toss in any ingredients you like

then add plum sauce and voila! CHOW MEN!

noodles, fine shred carrot, spring onions and chow mein sauce. Boil noodles, stir fry in wok with veg and then stir through sauce. Easiest and best. Of course if you want chicken or whatever then stir fry first before you add your cooked noodles.
