Cooking Chocolate has no added sugars in it, so if you were to take a bite out of it... it would be a horribly bitter taste that doesn't even taste like chocolate.
"Ordinary Chocolate" has added sugars to enhance the flavor and bring a sweetness to it.
Have you ever noticed chocolate bars that say 90% coco? Try one of these vs. your everyday candy bar... Hershey Milk Chocolate bar. You'll see a huge difference in taste.
White chocolate is the "worst" to eat, while Dark chocolate has natural antioxidants in it and has been studied to help with wellness of the body.

"Cooking chocolate is made with hardened vegetable fat which does not require 'tempering' to avoid white streaks developing which would be the case with 'regular' chocolate which is cocoa butter based.
It is usually sold as a low cost item compared with regular chocolate and tends to be made with cheaper ingredients such as cocoa powder rather than cocoa mass - ground beans - and there is a tendency to add wheat flour and whey powder instead of milk powder to cheapen it further.

Baker's chocolate is unsweetened.
Think that extra cocoa dark chocolate, but with absolutely NO sweetness. It's pretty gross. Nothing like your standard Hershey's bar.
