Easiest things are soup and salad, you can stock up on Organic soup (the others have a lot of salt). You can get them at regular grocery stores. You can also make things in the crock pot. That is very easy. You just toss everything in it - put it on low and leave it for up to 8 hours cooking. I put chicken breasts and veggies in it or chicken breasts to shred later to make either BBQ sandwiches or shredded chicken burritos (you can add peppers and beans and taco sauce when cooking). If you want full recipes just ask. Also if you are in a hurry try frozen meals, Lean Cuisine are ok. I avoid the ones with meat because I found they were too processed but the pastas and egg rolls were good. A mini George Forman Grill makes cooking easy too - you can grill vegetables for a sandwich or just a single chicken breast - makes it fast and easy. If you want easy, cook more and have leftovers. Good luck and congrats on getting healthy!!
