Steamed lobster, hand cracked at the table. I like to work at it and I get every ounce possible out of it. I like the bigger ones (3-5 pounders). Get your hands into it and have the juices run down your arm. On the side I like, of course, I need butter; not clarified, but with the solids left in. Break up the shells and remove all the meat for a butter soaking before eating all the big parts. But as doing so, periodically chew on a leg or two. Don't forget the sweetest meat at each of the 8 shoulders. Along with the lobster, I prepare steamed, then sauteed, young asparagus, slightly salted and peppered. Dip the asparagus in the same butter solution used for the meat. If the meat gets too cold, I will put all of the rest into a hot fry pan for one minute. It does nothing bad to the integrity of the seafood. A good beer on the side and I am in Heaven. I do this two or three times a year at my home, and it is with no exception my favorite meal.
