If you look on the side of your packet of Strong White Bread Flour you'll find a recipe. It really couldn't be more straightforward. I make bread rolls instead of loaves, as they bake in about 10 or 15 minutes instead of the longer time needed for a 2 pound loaf. Go easy on the salt and sugar, as it can kill the yeast and stop your dough rising.

Try the following
Ingredients
1 lb 8 oz (700 g) strong white bread flour, plus a little extra for the top of the bread
1 level tablespoon salt, or less, according to taste
1 level teaspoon easy-blend dried yeast
1 level teaspoon golden caster sugar
about 15 fl oz (425 ml) hand-hot water

Pre-heat the oven to its lowest setting
Begin by warming the flour in the oven for about 10 minutes, then turn the oven off. Sift the flour, salt, yeast and sugar into a bowl, make a well in the centre of the mixture, then add the water. Now mix to a dough, starting off with a wooden spoon and using your hands in the final stages of mixing, adding a spot more water if there are any dry bits. Wipe the bowl clean with the dough and transfer it to a flat work surface (you may not need to flour this). Knead the dough for 3 minutes or until it develops a sheen and blisters under the surface (it should also be springy and elastic). You can now either return the dough to the mixing bowl or transfer it to a clean bowl; either way, cover it with clingfilm that has been lightly oiled on the side that is facing the dough. Leave it until it looks as though it has doubled in bulk, which will be about 2 hours at room temperature.

After that, knock the air out, then knead again for 2 minutes. Now divide the dough in half, pat each piece out to an oblong, then fold one end into the centre and the other in on top. Put each one into a buttered tin, sprinkle each with a dusting of flour, then place them side by side in an oiled polythene bag until the dough rises above the tops of the tins – this time about an hour at room temperature. Alternatively, place all the dough in the one tin. Meanwhile, pre-heat the oven to gas mark 8, 450°F (230°C).

Bake the loaves on the centre shelf for 30-40 minutes, or 35-45 minutes for the large loaf, until they sound hollow when their bases are tapped. Now return them, out of their tins, upside-down to the oven to crisp the base and side crust for about 5 minutes, then cool on a wire rack

2-1/2 cups hard red wheat
1-1/2 cups spelt or rye (Biblically spelt was used, Ezekiel 4:9)
1/2 cup barley (hulled barley)
1/4 cup millet
1/4 cup lentils (green preferred)
2 Tbs. great northern beans
2 Tbs. red kidney beans
2 Tbs. pinto beans
Stir the above ingredients very well. Grind in flour mill.
(NOTE: all of these grains and beans can be ground in the GrainMaster Whisper Mill with no problems).

Measure into large bowl or DLX:

4 cups lukewarm water
1 cup honey
1/2 cup oil
Add to liquids:

freshly milled flour from the above mixture of grains

2 tsp. salt
2 Tbs. yeast
Stir or knead until well kneaded about 10 minutes. This is a batter type bread and will not form a smooth ball.

Pour dough into greased pans. You may use 2 large loaf pans (10x5x3) or 3 med. loaf pans or 2-9x13 brownie pans. Let rise in a warm place for one hour or until the dough is almost to the top of the pan. If it rises too much it will over flow the pan while baking. Bake at 350o for 45-50 minutes for loaf pans and 35-40 minutes for brownie pans.

*For fasting divide bread into 8 equal parts weighing 1/2 pound each. Eat a 1/2 pound cake and drink a quart of water every day. For fasting I do not alter the recipe.

This is a very sweet, moist, cake-like bread. For a more traditional bread texture I have used this combination of grains in The Beckers Bread and Roll recipe. Replacing the 7 cups of flour with the 9 cups of flour from the milled grains in this recipe. You may also add fruits and nuts or use the flour made from this mixture in other favorite recipes. This healthy combination of grains and beans is worth experimenting with. Combining grains and beans makes a complete protein.

Fast, easy, no kneading!

Batter White Bread

1 package dry yeast
1 ½ c. warm water
2 tbsp Crisco shortening
2 tsp salt
2 tbsp. Sugar
3 c. all purpose flour

Dissolve yeast in warm water. Mix Crisco, sugar, salt and 1 ½ c. flour in a large bowl. Add yeast, stirring constantly. Beat vigorously as you add the rest of the flour.
Cover with cloth and let double in bulk in a warm, but not hot place.
Do not punch but stir down. Spoon batter into 10 inch loaf pan and pat with floured hand to shape.
Let rise, covered, another 30 minutes. Bake 45 minutes at 375 degrees.
Cool slightly and remove from pan. Loaf should have a ‘hollow’ sound when thumped on the bottom. Place loaf on rack and brush top with melted butter.

i use this often when in a hurry.sometimes add some garlic and cheese for something different. you could even add grated cheese on the top or even a teaspoon of dried mixed herbs for herb bread or leave it plain its sooooooooo simple.

2 2/3 cup SELF RISING flour in bowl.
Stir in any brand 12 oz. beer
Stir in half, mix well, stir in rest of beer, all of it, no sipping. It will be a very wet dough. Divide into two 9x5 greased with margerine loaf pans, place in oven at 350 degrees for 50 min. remove from oven and turn onto wire rack to cool.

Makes a bread very tender on the inside, slightly crusty on the outside. Only two ingredients, what could be easier?

goodluck and enjoy
