Chicken Fried Steak

8 pieces of tenderized round steak
2 cups Flour
Salt and Pepper to taste
2 eggs
2 cups milk

In a mixing bowl beat the eggs and milk together and set aside. Combine the dry ingredients together and mix well.

Take the meat and dip into milk and egg mixture; then into the flour mixture, back again in the milk and egg and then back into the flour mixture.

Fry slowly in a cast iron skillet with hot grease. Cook until golden brown.


Cracked black pepper Gravy
After the cutlets are removed from the pan, pour off all but about 2 tablespoons of oil, keeping as many as possible of the browned bits in the pan. Heat the oil over medium heat until hot.
Sprinkle 3 tablespoons flour (use the left-over flour from the chicken fried steak recipe (You weren’t gonna throw that goodness away now were you?) in the hot oil. Stir, quickly, to brown the flour.
Gradually stir in 2 1/2 cups milk and stirring constantly with a whisk and whisking out any lumps. (You can cheat and use a emersion blender if you have one ) Lower heat, and gravy will begin to thicken. Continue cooking and stirring a few minutes until gravy almost reaches desired thickness. It’s gonna thicken more as it sits. Check seasonings and add more salt and cracked pepper according to taste. Add more milk if it gets too thick.

Tenderize a choice cut of meat, use a knife or a pick to make some holes in the meat, not to many. Have some bread crumbs, crumble chips, or what ever you want to use as breading. Soak the meat for 30 sec in buttermilk or heavy cream, dip in the crumbs. Put in a pan with light to medium oil at med to high heat, and let cook for 5mins on each side with a lib on. Once crispy not burnt, take out and either let rest for serving, or put on a pan in oven for 15min on 300 deg heat. Make sure that you keep the little oil in the pan, to this add 1/2 cup of milk mixed with a bit of heavy cream and flour to thicken. Mix this blend with a whisk and add some salt and pepper to flavor, make sure to only add a little at a time so that its not salty, tsp. of salt would be good. Volia chicken fried steak and gravy.

Season it with little salt and pepper. Add a tablespoonful of frying oil and a tablespoonfull of white vinegar to it. This will make frying easier. Then apply some flour to the steak, remove exessive flour. Beat an egg put the steak in it and make sure it is all covered by the egg. Then cover it with bread crumbs. Heat a skillet, then add frying oil and heat it. Fry the steak on both sides till light brown.

Buy tenderized round steak or veal cutlets.

Season meat with a seasoning salt of your choice. Dip in flour, then milk and egg mixture, then flour again.

Heat your oil til flour sizzles when dropped in. (start on high) Put in your battered meat, turn your heat down a little. Cook until you can see the sides of the batter browning considerably. Turn over and turn up the heat again for a bit. Turn the heat back down after your batter has browned. If you turn your heat down too low or turn it before it is browned good, the breading will fall off or become soggy. The secret it to cook it fast.

use thin cube steak. dip it in flour shake it off then in milk and beaten egg then in flour again. Make sure the second flour is seasoned with salt and pepper add to oil, making sure that oil is hot enough to make a nice sizzle but not too hot. Cook for about 3-4 min. per side and drain on paper towel. . Drain most of the oil out of the pan leaving maybe about 1/4 cup. Add about the same of flour to the pan and mix it together making a roux. Then add salt and pepper and milk to get a consitency you like. This will be your gravy. then eat!! Its easy.

You use round steak. Cut into the size steaks you want.

Pound with a tenderizer on both sides. put in a bowl with flour, salt, pepper mix until meat is thoroughly covered.

Heat 1/4 cup oil in skillet until hot, but not smoking. Place steak in pan and leave for 2 min. turn ONE time and cook for 3 minutes or until done to your taste.

Make white gravy ( I use a mix )

Drown steak in gravy once on the serving plate.

Gobble down with mashed potatoes or hash browns.

Season the steak, roll in flour and fry in a little bit of oil. Only enough oil to go up not quite halfway. Brown and turn over. Good luck!

I grew up on chicken fried steak and now my daughter loves it ! I make it a couple times a month !

Get a cheap piece of thin steak, soak it in milk, then coat it with a mixture of flour, salt and black pepper. Fry it in a pan full of hot oil.

the identifying thing is to POUND the steak, then batter and fry in hot grease.
serve with mashed potatoes, gravy, rolls and green beans or mustard greens and some jalapeno peppers
