Tour agents will bump the price up to get their 10%. Online agents (such as Expedia, Travelocity, et al) are often much cheaper. Even the airlines' own websites can offer the best deals. Just be prepared to do a bit of research yourself. It's fun doing it, and it's far cheaper. Twice I've been quoted airfares 1/3 more expensive in "independent" travel agents than the online prices for exactly the same flight to Thailand. Going via another country often also reduces your costs but increases the travel time - via the Middle East is a common waypoint (Gulf Air (crap) and Emirates (ok) being the main contenders).

Use www.tripadvisor.com to read reviews of hotels. But don't let one bad review spoil ten good ones.

When you get there, book any tours locally. Even your hotel will offer cheaper deals than booking in the UK. Better still, negotiate in local travel agents [in Thailand].

Just read up as much as you can to get an idea where you'd like to go, get a cheap flight (see newspaper ads) and find accommodation on arrival. It's easy and you see what you're getting.
