Potato pancakes
4 medium potatos
1 medium onion
1 egg beaten lightly
2 tablesp fine dry breadcrumbs
1 teasp salt
1/2 teasp pepper
butter or bacon fat
Wash and peel the potatos. Grate finely and drain off the water that collects in the bowl. Squeeze the potatos to get out as much water as possible. Grate the onion into the potato and mix in the egg, breadcrumbs, salt, and pepper. Heat the butter or bacon fat in a skillet. Put in 4 large spoonfuls to make 4 pancakes. Fry slowly until brown and crispy on the bottom, then turn and brown
the other side. Remove the cooked pancakes, add more fat, and repeat until all the pancakes are done.

Company Potatoes
For each 2 lb. (new) of baby red , potatoes you will need 1 pint of whipping cream. Wash potatoes, cut any that are large in half. Place potatoes in a 13x9" glass baking pan, pour cream over, cover and refrigerate overnight. You can stir them a couple of times, so they won't darken. A short time before dinner, stir the potatoes again. Bake at 350F, for 35 min. or so, until they test done. Stir once while cooking, again to make sure they are kept moist. That's it - no seasonings, butter or cheese. This is fabulous.
Garlic Mash Potatoes
Makes 4 servings
Ingredients:
2 pounds medium size baking potatoes
2 whole cloves garlic, broken but not peeled
4 ounces unsalted butter
1 1/2 cups milk
salt to taste
nutmeg to taste
4 tablespoons parsley, finely chopped
Preparation:
Peel and cut potatoes into quarters. Place in cold water in a medium-size pan, bring to a boil and cook for 15 to 20 minutes or until tender.
Meanwhile, plunge the garlic into boiling water and cook for 5 minutes. Drain, then peel when cool enough to handle. Place in a small sauté pan with half the butter over low heat for 10 minutes. Be very careful not to let the garlic burn.
Add 1 cup of milk, bring to the boil and simmer for 2 minutes. Purée in a blender or food mill, or press through a sieve.
Drain the potatoes well then put through a potato ricer or food mill, or use a potato masher. (Do not use a food processor, as it will make the potatoes gooey.)
May be prepared up to this point ahead of time, then reheated in a 325 degree F oven for 20 to 30 minutes. Add more butter, 1 tablespoon at a time, 1/2 cup warmed milk and seasonings to taste. Serve immediately for best flavor.
BOURSIN TWICE BAKED POTATOS
Serves 4
Preparation :25 Cook 1:20 Stand :10 Total 1:55
These potatoes can be made ahead of time and reheated in the oven or microwave.
4 medium russet potatoes
1 5 ounce wheel of Boursin Garlic and Herb Cheese
3 tablespoons butter
1 cup milk
Paprika
Green peppercorns, cracked
Wash the potatoes carefully and pierce each side with a fork to release steam while cooking. Bake for approximately 1 hour at 350 degrees or microwave approximately 13 minutes on high until they are soft on all sides. Once removed from the oven or microwave, allow them to rest for 5-10 minutes until you can easily handle them.
Once they can be handled easily, slice off the flat side neatly and remove the potato carefully with a soupspoon, being careful not to rip the skin. Place the hot potato into a mixing bowl.
Mash the potato with a hand masher, mixer or potato ricer and add the Boursin cheese and butter. Mix well. Add the milk slowly while mashing until the consistency is that of mashed potatoes. Season with salt and pepper to taste.
Once the potato mix is perfect, stuff it back into the potato skins, making sure that the potato mix sits high above the skin.
Sprinkle with paprika and cracked green peppercorns for flavor and color.
Before serving, reheat in the oven or microwave.

Oh heck... potatoes are the easiest of the easiest.
Bake em (based on side) in or out of aluminum foil, until fork tender... throw in butter, sour cream and chives (or go wild and add any other option) on the table and let the guests run amok.
Then there's the easy mashed potatoes - more work, gotta squish em, and add cream and butter... but tasty - can add cheese and pepper and salt as requested.
And there's cookin' em a bit... halving them, smooshing up the insides, adding sour cream, and butter - sort of like making mashed potatoes. Refill the half skins with the smooshed up potatoes... plop some cheese on top - broil real quick (just enough to melt the cheese and crisp the 'taters)...
Delicious...
Or heck - go college - throw chopped taters into a wok or pot. Add curry powder, and later some onion, carrots and you're done. Its really tasty lived on it for years in college.
Dunno - run amok - taters pretty much survive anything we do to them... and are pretty much always edible in the end.

There are so many things you can do with potatoes and, yeah they are inexpensive. One of my favs is homemade potato soup. Peal a couple of potatoes (one per serving), wash and dice in about 1/2 inch cubes. Cover with water in sauce pan and boil for about 20 minutes until soft but not falling apart. Drain. Make a simple very thin white sauce for your soup base: 1 cup milk, 1 TBL flour, 1 TBL butter or margarine per serving (double, triple depending on how much soup). Melt the butter in a sauce pan. Add the flour and your favorite spices. Slowly mix in the milk. Keep stirring until it boils. Turn it down and boil and keep stirring for one minute. The soup should get slightly thicker. (If you like thicker soup base start with more flour in the beginning). Remove from burner. Add the potatoes. If preferred, melt in shredded cheddar or bacon bits for more pizzazz. Enjoy! Easy and inexpensive.

Jacket potatoes (UK term - potatoes cooked in their skins) are quick and easy and you can do all sorts of fillings, such as coleslaw, chilli and grated cheese, or crumbled blue-cheese and mayo, or just melted butter.
I find doing them in the microwave is quick and easy and gives much more controllable results than the oven. If I do them in the oven, they turn out dried and shrivelled, but in the microwave, they are perfect and moist inside with golden skins. You can eat the skins or leave them as you wish.

Another idea:
Peel and slice some potatoes and fry in oil/butter in a frying pan/skillet with/without some chopped onions.
Make a basic cheese sauce by making a basic white sauce and adding cheese, ideally strong blue-cheese.
Put potatoes and onions on the plates and pour sauce over it. Delicious.

Take a link of sausge and fry it down,then add some onion, bell pepper,garlic powder.Mix well with the sausage.Then take 1can roi-tel tomatoes,plus 1can water,add to the sausage mix.Now chop up 3 med. potatoes and add to that.Bring to a boil and turn down and put lid on.Let cook till potatoes are tender.Eat with some cornbread and sweet tea for dinner or supper.

GERMAN FRIED POTATO PANCAKES
5 lbs. potatoes
2 lg. sweet onions
2 lg. eggs
1/2 c. self-rising flour
Salt & pepper to taste
Grate potatoes and onions together. Pour off excess juice, mix in eggs then add enough flour to thicken. Salt and pepper to taste. In large iron skillet, heat cooking oil; drop mixture into hot oil (about 2 inches pancakes). Brown to crisp on both sides. Serve hot.

There are many receipes online for making stuff with potatoes, you can make scalloped potatoes, make french fries, mashed potatoes, baked potatoes. Go to goggle and type in potato receipes, they will give you many selections of receipes for you to try.
