Is there any software (preference on free!) that will let me backup my server to a client PC? i just want to implement this as a fail safe as we can't quite afford off site storage but need something other than the tape backups

take a look at True Image workstation version, i think it suites you very good. You can easily store image everywhere you like(FTP, different types of storage devices, etc)

Quick and foul way of doing this...

Share the disk (either of the machine you want to back up or the machine you want to back up on).
Connect the disk from the other machine
Use a batch file to copy (or xcopy) anything you want copying from disk to shared disk.
If you need to add the Windows scheduler to automate the runof the bat file.

That's assuming you've got Windows at both ends.

If it's Linux it's easier... you've got nfs mounting / cron / rcp / scp / tar and so on...

If it's mixed, use samba to let the Linux end see the Windows disk and then use Linux stuff as above to copy it.

Or you can find Windows backup utilities given away on the cover disks of most computer magazines... check what's available in your local newsagent / supermarket. You'll find a cheap cut-down version that will work... for instance PCPlus in the UK gave away a working copy / license for Paragon Exact Image7 SE with issue 248 (Nov 2006)... in the hope you'd buy the full product.

I use Winrar in a batch file to backup the important directories.
Since I'm using a batch file, then I can use Task Scheduler to run a full backup, incremental and also run Spybot, AVG, clean out temp files, defrag five computers and shut them down, all on a NAS drive.

I can only agree with michael n. True Image Workstation is the best solution of your problem. It is't free but I think you won't find free software of same quality.

Yeah... I'm absolutely agree with Michael cause True Image is a really good choice for you but unfortunately it is not free.
