egyptian lentill soup
5 cups water
1 cup dried red lentils
2 cups chopped onions
2 cups chopped potatoes
2 carrots
2 marrows
2 big tomatos
8 garlic cloves, peeled and left whole
1 tablespoon olive oil
2 teaspoons ground cumin
1/2 teaspoon turmeric
1 teaspoon salt
2 tablespoons fresh lemon juice

Combine the water, lentils, onions, potatoes,marrow,carrot, tomatos and garlic in a soup pot, cover, and bring to a boil.
Reduce the heat to a simmer until everything is tender, 15 to 20 minutes. Remove from the heat, and puree ((in batches, in a blender OR you can use an immersion blender and blend to desired texture (I like to leave it a little chunky)) until smooth.
In small saucepan on low heat, warm the oil until hot but not smoking. Add the cumin, turmeric, and salt and cook, stirring constantly for 2 to 3 minutes, until cumin is fragrant. Take care not to scorch the spices. Set aside for about a minutes or the oil will may splatter when added to the soup.
Stir the slightly cooled spices into the soup.
Add the lemon juice.

My potato Soup. It is really good and a family favorite.
In water, boil about 5#'s of potatoes that have been peeled and cubed, with a little salt, until fork tender. (Make sure that when you cut up the potatoes, they are pretty small and all about the same size, so they cook quick and evenly.) Drain most of the water off, leaving a little in the pot with the potatoes. Return to the heat. Mash the potatoes, leaving some lumps in them for consistency. Add milk, at least 6-10 cups or so, since this is the only liquid used for the soup. Also, add salt, pepper, 1 stick of butter and 2 chicken bouillon cubes. Bring to a slow boil, stirring constantly, so the milk does not scorch. After it comes to a boil, add 1 large box of Velveeta cheese, that has been cut up into small pieces. Cook until the cheese has melted. Enjoy!!!

The best kind of soup in the world is definitely my mums homemade pumpkin soup (its delicious). The trick is to use a really nice sweet pumpkin (it has to have flavour...otherwise its pretty much useless).
Ingredients:
1 whole jap or butternut pumpkin washed, cut in half lengthways (or in 2 big chumks (depending on how big it is).
Salt
Pepper
Milk
2 or 3 Onions
4 large cloves of Garlic
oil
cream (optional)
Method:
Preheat oven to 180 degrees celcius (I'm from Australia)
Line a baking tray with gladbake or the equivalent (non-stick cooking paper)
Put the two halves of the pumpkin on the tray seeds facing up. Put the garlic cloves on the tray. Cut the onions in half and lay on the tray (with skins on).
Brush the vegetables with olive oil and season with salt and pepper.
Cook in the oven for an hour I believe or until the pumpkin inside is tender and the outside is golden. Get a food processor or blender ready (use a glass one or wait until the vegetables have cooled and scoop the seeds out of the pumpkin and discard. Scoop the flesh of the pumpkin (without the skin) and place in the food processor. Scoop the flesh from the onions and also cut the skins off the garlic and place in the food processor. Blend until smooth. The consistency at this stage should be quite thick. From there when you are almost ready to eat pour in enough milk to the right consistency for soup (or your preffered consistency). Add salt and pepper if needed and pour the mix into a microwave proof glass bowl and heat until hot.
Serve in bowls with a pouring of cream in a circular motion into each bowl and serve with a sprig of coriander or another herb if desired.

the traditional Jewish penicillin.Chicken soup.If you are feeling a cold coming on or lethargic..need a lift. Nothing works better.Doesn't have to be Kosher
one chicken skin removed,one large onion chopped, 1`50g carrots cubed,250g pumpkin cubed,100g turnips and parsnip cubed,250g potatoes cubed,2 celery sticks,with leaves fresh parsley 8 peppercorns , one bay leaf.
Put it all in a big pot with about 3 to 4 litres of water.Boil and then simmer for 11/2 hours.Strain the lot, let cool. remove all the chicken meat from the bones and shred. put chicken into the soup
and reheat for 10 minutes. season. Iike to put in thin soup noodles during the reheat, But Matzo ball are delicious.
Must be served hot.
Some crusty white bread.

1 pound cubed lamb meat (can use chicken)
1 teaspoon ground turmeric
1 1/2 teaspoons ground black pepper
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cayenne pepper
2 tablespoons margarine
3/4 cup chopped celery
1 onion, chopped
1 red onion, chopped
1/2 cup chopped fresh cilantro
1 (29 ounce) can diced tomatoes
7 cups water
3/4 cup green lentils
1 (15 ounce) can garbanzo beans, drained
4 ounces vermicelli pasta
2 eggs, beaten
1 lemon, juiced
Place the lamb, turmeric, black pepper, cinnamon, ginger, cayenne, butter, celery, onion, and cilantro into a large soup pot over a low heat. Stir frequently for 5 minutes. Pour tomatoes (reserve juice) into the mixture and let simmer for 15 minutes.
Pour tomato juice, 7 cups water, and the lentils into the pot. Bring the mixture to a boil, then reduce the heat to simmer. Let soup simmer, covered, for 2 hours.
About 10 minutes before serving turn the heat to medium-high, place chickpeas and noodles into the soup, let cook about 10 minutes (until noodles are al dente). Stir in lemon and eggs(drizzle into the pot-as egg drop soup), let eggs cook 1 minute.

Any kind of real GUMBO, shrimp, crab, crawfish, chicken, ham, combinations, the important part is to make a proper roux as a starter. Always include the Louisiana holy trinity (celery, bell pepper, onion). I always include okra in mine and add the file (fee-lay) at the end. Check recipezaar.com for some good recipes.

They are so many yummy one's but it also depends on the individual taste. Here's a nice and quick recipe:
1. cut celery and potatoes in pieces
2. boil them with water and beef stock
3. once they are cooked blend them, add sour cream/ black pepper and evt. salt
It's also a lovely soup to be eaten cold in summer
