1 bag nacho chips
- 1 cup sharp Cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 16 ounces can-refried beans
- 1 pound lean ground beef
- 1 large onion, chopped
- 4 green onions, sliced
- 3 ripe tomatoes, diced
- 4 ounces black olives, sliced
- 1 bunch Romain lettuce, torn into bite size pieces

I n a heavy skillet, brown ground beef and onions. Arrange nacho chips on platter. Cover with Monterey Jack and sharp Cheddar cheese; then place in microwave until cheese is slightly melted.
Spread refried beans onto slightly melted cheese. Cover refried beans with browned ground beef. Place in the microwave and heat thoroughly (approximately 1 minute). Garnish with lettuce, tomatoes, olives, and green onion.

This will make enough for a crowd........

Melt one big block of velveeta with one can of rotel. They have several different rotels so pick the one you like and go with that. Chop about a half roll of sausage and brown in a skillet add to crockpot of velveeta mixture. If you don't want sausage in your cheese dip you can either serve it or browned and seasoned hamburger on the side ( I am not a real meat fan so this is how I do it I make hamburger like for tacos with taco seasoning in the skillet and put it on the side so I can dip in what I want and they can too!)
Chop all veggies that you use for tacos some suggestions are:

onions
lettuce
tomatoes
olives
jalepenos
avacodo

Make sure you set out some refried beans on the table after mixing them with a little salsa and cheese and microwaving them until they are heated thru
also set out sour cream and salsa and if you have leftover chili that 's good or french or ranch dressing.

Set it all out with your favorite chips and let them build their own they are wonderful and my kids love making their own so that way they don't have to pick anything out that they don't like and my husband and I love loading them up to the point we have to use a fork to eat them! A family favorite for sure!

I cover a plate with tortilla chips. Then using two spoons I place small dollops of refried beans all over the top of the chips, and sprinkle shredded cheese on top of that. I either pop that into the microwave or oven until the cheese melts - then I top it with shredded lettuce, sliced olives, salsa, chopped avocado - and if everyone likes them - sliced jalapenos.

i use a can of chili / i can refried beans / 1 can chili's /1/2 package shredded cheese / put in large bowl microwave obout 5 minutes add sour cream ( also makes a good burrito
