I like turkey, avocado, cheese, and crispy bacon (with tomatoes, lettuce, mayo, and mustard optional) on toasted sourdough bread. Not the healthiest option, but very tasty!
If you're in the mood for something sweet and decadent, try a Grilled Peanut Butter and Banana Split Sandwich:
INGREDIENTS:(for 1 sandwich)
2 slices of bread
1 teaspoon butter (softened)
1 tablespoon creamy peanut butter
2 teaspoons honey
½ teaspoon semisweet chocolate minichips
1 large strawberry, sliced thin
½ banana, cut lengthwise into 3 slices
I tablespoon pineapple jam
DIRECTIONS:
Spread one side of each piece of bread with ½ teaspoon of butter.
Mix together the peanut butter and honey and spread onto the plain side of one piece of bread. Sprinkle with chocolate chips and top evenly with strawberry slices and banana.
Spread pineapple jam on the other plain slice of bread. Assemble the sandwich carefully.
Heat a nonstick skillet over medium-high heat. Add the sandwich to the pan and cook until lightly brown on both sides. (About 2 minutes per side)

I make homemade Italian Beef sandwiches.
I have searched high and low for a good Italian Beef in Chicago and since my favorite restaurant closed a few years ago I can't find any to my liking... so I make my own now.
I use eye of round roast and cook it in a waterless grease-less pot. The meat comes out so flavorful and tender and it makes a beautiful dark brown au jus.
I use a meat slicer to make nice thin cuts of meat and top it off with some cheese and pepperonchinis or some giardinaro. Delicious!

Our favorite is a grilled Tuna & cheese sandwich. We spread the bread with Tuna salad and then lay slices of Cheddar or marble cheese on top. Salt and pepper. Butter the outsides of the bread only and grill. Mmmmmm..........

I like peanut butter and banana. But, since the sight of it makes my family want to hurl - I limit it to times when I'm alone.
Otherwise my sandwiches consist of a fresh french roll with light mayo and little mustard, lunch meat, cheese, lettuce, tomato, thinly sliced onion - and sometimes avocado. Sometimes I ditch the meat and put thick slices of avocado. Or I make an avocado spread using one avocado, 1 tablespoon of mayo and 1 tablespoon of lemon juice.
I also like to substitute alfalfa sprouts for the lettuce.

Grilled cheese sandwich but with mayonnise on the bread in place of butter and monterrey jack cheese in place of american. It has to be cooked on a lower heat though because it takes the cheese longer to melt.

Cut french baguette in half lengthwise, spread layer of basil pesto spread on one side, layer sliced tomato, then slice mozerella cheese, drizzle balsamic vinegarette dressing on top, Can be heated in oven to make bread crunchy and slightly melted cheese. Yummo!
