-big old round loaf of fresh bread, dug out and replaced with spinach dip
-Asian salad (cut up a suey choy fine, other salad veg and add a bottle of Safeway's new "O" Ginger Soy dressing)
-vegan shepherd's pie: basically you fry up mushrooms and onions in virgin coconut oil with a sprinkling of celtic sea salt and sage, and then add a box of instant chicken dressing; then cover with garlic-mashed potatoes and stick it in the oven at the pot luck site. It's comfort food and easy to boot.
Good luck!

Get the bagged Cesar salad mix, it usually comes with croutons and dressing. Then all you need to bring is a bowl and salad tongs - just takes a minute to assemble.

OR

I like to bring a crockpot full of chili (a big can or cans to fill it) and I plug it in about 2 hours ahead (an hour on high, and then turn to low when it boils). Then set out chopped onion, shredded cheese, and/or sour cream for toppings. Be sure there are bowls or cups to ladel it into (bring a ladel).
