You said they were from students. So I will assume you are a teacher.
You simply give a public thankful in the classes you teach. State that you received a gift without a name on it; state what the gift was and state that you wish to thank whomever it was from.
Let others know as well that you received a gift without a name on it. That way, if the person doesn't realize they didn't put their name on it and wonders as to why you didn't give them a thankful card, they'll find out from others.

If the person didn't put a name on the gift, there's no way you can know the identity. Therefore, a thank-you card is not expected.

Send a card thanking them for the gift which you will describe in your thank you card and the one who sent such a card will know its meant for him or her.
