Someone told me to use hoja santo..but I can't find it. I'm in Michigan. I tried to use Guajillo Chile paste, but it turns out I'm not too skilled in making that.

All of these will serve you well.
And you will have to problem finding them if you don't already have them on hand.
Black pepper
Garlic Powder
Ground Comino (cumin)
Cumin Seeds
Chili Powder
Paprika

What I use is Chipotle Peppers in Adobo Sauce and Taco seasoning mix. Put the together with your Pollo and Chorizo you're going to knock some socks off, Good Luck

try some new mexico chile powder, cumin, coriander, oregano garlic etc . if you want to improve your cooking skills get one of Rick Bayless' cookbooks. I have 'Mexican Cooking' and ' Mexico: One Plate at a Time' . They both have really detailed instructions and great information.
