We have a golf tournament every year. Last year I netted over $24K.
To do this you need to find a course that will host you, and nail down a date. Then you get busy getting sponsors. Try to get a printer to donate services for you. You will spend a lot of time on the phone but it is worth it. A local celebrity emcee is a great way to promote things.
Finally, make sure you promote your tournament and fill your course.
there is obviously more to it but a good comittee can lighten your load.

Sausage sizzle outside and busy shopping center make sure to get management approval first. Type up a letter go to business houses and ask if they will donate prizes for a raffle. The charity organization should have a permit to raffle up the street, to raffle off meat, seafood and alcohol.
Lucky numbers. Big sheet of cardboard rule up squares on it to fill it up, number each square 1 to 100 or more. Charge a $1 or 2 for a square, one person per square. Person writes in a square their name and number that becomes their square. How to draw it: Say you charged $2 a square using numbers 1 to 100 the prize would then be a $100 and the money you raised would be $100. Draw the numbers like a raffle. This is any easy one, you don't have to re-lie on other people.

Organize a community event, such as a party or picnic, etc, and charge admission. At the event, consider having a silent auction, and/or raffle. At several recent charity events, the silent auctions for various donated items was extremely successful, and earned a large amount for the non-profit agencies sponsoring the events.
Depending upon what type of organization, you might want to consider providing pins, buttons, etc. when people donate to your cause, and provide an easy way for people to donate. There's a good website that has a tool that may be able to help:

raffles... get businesses to donate expensive and/or valuable gifts and the raffles with sell BIG, and your dollar output is virtually nil.
