Fresh fruit crepes. Buy the best fresh peaches or strawberries and clean and slice them.
2 eggs
1/2 cup flour
1/4 cup milk
1/4 cup water
1/2 teaspoon salt
2 tablespoons melted butter
Measure all ingredients in to blender jar; blend for 30 seconds. Scrape down sides. Blend for 15 seconds more. Cover and let sit for 1 hour. (This helps the flour absorb more of the liquids.) Makes 6 or 7 crepes.
Recipe Variations:
Add 2 teaspoons sugar and 1 teaspoon vanilla or lemon zest
Heat pan on medium heat and spray with scant amount of oil.Pour small ladle of batter and cook until just cooked and turn over, To serve put a spoon full of chopped fruit in center and roll crepe. Serve with fresh fruit arranged atop crepes. Sprinkle with powdered sugar and a dollop of cream fresh.

Take cinnamon raisin bread, toast, then dip slightly in beaten eggs. Grill in a lightly buttered skillet, until light brown. Remove, and while warm dust with powdered sugar, and slice strawberries, oranges, and blueberries for a royal topping! Add a smidgen of whipped cream or warm maple syrup!
If she drinks coffee, prepare a cup, and heat milk almost to a boil, add equal parts to make a Latte!!!
If "Mom" is partial to champagne, and you have permission, 1/3 champagne, 1/3 lemon sorbet, 1/3 ice to the blender-ooh la la!

Pancakes or waffles and fresh berries is a fun breakfast,with a scoop of ice cream, juice, tea or coffee. Another suggestion for breakfast or brunch in our home is chopped egg, cream cheese, tuna or smoked salmon on mini buns or pitas or bagels served with a veggie platter of sliced cucumbers, tomatoes, and lettuce. Simple but refreshing. The great thing is the gesture for your mother.

Well I have fixed nice homemade waffles with strawberries and whip cream, nice fresh coffee and a small glass of juice with a few flowers and a nice candle served on a nice tray or platter, with a little note.... go with her likes and add the special little touch's to probably bring tears to her eyes.. sometimes just keeping it simple and a little note is the best, and maybe a nice little mint ... Use your imagination... have fun and enjoy ... be nice to know how it turns out

This recipe is for Golden Rod Eggs. I usually make them for Christmas morning and Easter morning. It's super simple, makes a great impression and the taste is lovely.
4 slices toast (use a hearty white bread, like an artisan bread, to hold up well under the sauce - the bread needs to be light to not overpower the delicate flavor of egg)
4 hard-boiled eggs, whites and yolks separated; whites chopped medium/fine
White Sauce
1 c. milk
2 tbsp. butter
2 tbsp. all-purpose flour
1/4 tsp. salt
Make white sauce by melting butter; add flour & stir until dissolved; add salt & stir; add milk slowly but all at once, stirring constantly until sauce has thickened.
Add your whites of your boiled eggs to sauce.
Finely grate boiled egg yolk.
Pour white sauce over toast. Sprinkle with grated egg yolk and a gentle dash of paprika.
Broiled or sliced tomatoes make the plate colorful and add delicious flavor, too.

Find a pancake recipe but put food coloring in them to make them either her birthstone, or her favoriate color. My mom did that for me and it meant alot to me. And it doesnt effect the taste or anything as long as you dont put too much.
p.s. im only 13 so im not sure if anyone thats not a kid will be to exited about it

Always make her pancakes, with fresh fruit as a side. Or french toast. Then you can have eggs and baccon or sausage or both. Fresh juice, coffee. Im sure that whatever you make will be good, and she will love it.
