The number of wise men is unknown - the gifts that were given were the 3 gifts given to Kings.

Gold so they would have money to pay for stuff Jesus needed. The other two were very rare and sought after, they could get alot of money or barter supplies with it.
Basically they helped support Jesus's family.

They weren't really symbols for anything they were more like their appreciation and gratitude to God for sending His son. And I don't think we were really sure on how many wise men but I think they think there is three because there were 3 gift.....gold,frankencense,myrr. Hope I helped!
