By their very nature, eggplant doesn't lend itself well to canning. To freeze without going the Eggplant parmesan route, bake eggplants at 425 degrees for 30 minutes. Peel them, chop them, then freeze. This type of frozen eggplant makes quick work of casseroles and spaghetti sauce later.

I have never seen them either way - only fresh, however, you may be able to find them battered and frozen, or prepared as eggplant parmesian in a frozen dinner source. Check in the frozen tv dinner area of your supermarket.

Why? Buy Them Fresh They Are Usually Fresh Most Of The Year And Very Inexpensive!
plus i think you can buy them frozen but not canned

I've only been able to find it in the fresh produce isle.. you can get it frozen only in the eggplant parmeseigne form.

I've never seen them sold that way. And if I did, I wouldn't buy them. I advise you to stick with fresh eggplant. It's not that good to begin with, and canning or freezing is not going to make it better.
