For those wondering how gelato is different than ice cream, the basic differences that I have found seem to be the "overrun" (or aeration) of gelato, which is a lot less then ice cream - resulting in a more solid, richer texture (air content in gelato can be as low as 15%, air content in ice cream can go up to 50%).
Another main difference is that it is not frozen as solidly as ice cream, giving it a smoother, creamier feel. The amounts of basic ingredients found in both - milk/cream, sugar, sometimes eggs - differ slightly also, with gelato having only milk (or water, depending on the flavor) or milk and a little cream, which not only means less fat (2-8% fat vs.the16-20% found in ice creams), but it means the added flavorings are the real star, not the dense, fat-laden cream that can cover delicate and subtle flavors.
Another main difference (from industrial-strength "supermarket" ice cream, not the yummy stuff that comes out of your home ice cream maker) is that gelato is usually made in small batches, and usually made with seasonal ingredients, resulting in much fresher flavors.

Gelato - (the Italian word for gelato) - Usually 12-17% air pumped into it causing a richer and denser ice cream with 1/3 the fat of a premium American. Typically made with more cream than milk. The best gelato I ever had is at Villa Crema in NM.
Gelati - (plural for multiple gelato ice creams) - It's also an East Coast product invented in, I believe the 70s. Which is layered.
Ice Cream - (american style) - Usually 70-90% air pumped into it (overrun). Ever wonder why it melts so fast and you can leave it out on the counter to defrost and then stick it back in the freezer and dethaw it again next week? Me too.
NOTE - guitar _guy is thinking of gelati or italian ice not gelato. Gelato has lots of dairy. And, check the labels because so does some italian ice.

Legally Ice cream has to contain at least 10 percent fat and it can also contain a lot of added air. The link below better explains the added air, known as "over-run". Gelato has less fat, than ice cream (usually between 5 and 8 percent fat) since it's mostly made with less cream, more whole milk. Gelato also does not contain any added air, which results in the extra dense, creamy texture. Legally, in the USA, Gelato, is not even ice cream but is classified as a "frozen dessert".

yes Gelato is made with a much heavier cream than ice cream also Gelato has a much bolder flavor and to me if u can get Gelato that is what i would get it is also not as high in sugar because it usually more fresh than ice cream Hope this helps you

There is a difference.
Ice cream generally has more air churned into it, thereby making it lighter and more cost-effective. Ice cream, although regulated by government standards, contains a wide variety of natural and artificial ingredients. The balance of natural versus artificial ingredients in ice cream depends on the price and quality of the brand: lower priced brands often contain more artificial than natural ingredients.
Traditional gelato makers use whole milk, eggs, sugar, and natural flavorings. Therefore, gelato is thicker and creamier than most ice creams.

Gelato is simply Ice Cream in Italian. But it has been my experience that real Italian gelato is lighter and creamier that ice cream in the US.

yes actually ice cream is different than gelato because gelato contains no dairy products so gelato is simply "juice" that has been shaved to the consistency of a slushy
