Potato Casserole
1 bag frozen hash brown style potatoes
1 can cream of chicken soup
1 can cream of mushroom soup
1 pint sour cream
1-2 cup bag shredded cheddar cheese
1 cup melted butter
3 cups crushed corn flakes
Mix potatoes, soups, sour cream, cheese, and 1/2 cup butter in large bowl. Spread evenly in casserole dish, pour remaining butter over top, then sprinkle with corn flakes. Bake at 350 for 40 minutes.

do something easy like a hot spinach artichoke dip and couple of bags of tortilla chips you can google for the recipe or go to www.cooks.com and type hot spinach artichoke dip in and it will find it for you. Also it says to bake it but I always just put mine in a crock pot and it works great also you could do little smokies or nacho cheese with velveeta and rotel and chips so many easy things the best part about doing something like this is that they get so much while they are at lunch and then after that it is all gone most teachers like to have something they can put into a little bowl and munch on in the classroom.....another good one is bbq meatballs in the crockpot they always love those! Hope it helps but I say keep it simple no one will eat anything if they can't figure out what it is!

EASY Mexican casserole.
Its vegetarian (but not vegan) so most people would be able to eat it:
In a large casserole pan, pour a wee bit of oil to cover bottom. Arrange a layer of slightly overlapped corn tortillas. Drip over that one can of chopped tomatoes....then a layer of 1 1/2 cans of Taco Bell refried beans. One can drained corn kernals. One tiny can sliced olives. One medium onion chopped. A layer of shredded cheese (Mexican mix--or Jack). Another can chopped tomatoes. Another layer tortillas. Another layer of cheese. Repeat beans, corn, onion, olives. top with final layer of corn tortillas, more tomatos, and a good layer of cheese.
Bake at 375 for about an hour, or until it is cooked through, bubbly and top is browned. Have a bowl of jalapenos and salsa for those who want to spice it up and some corn chips.
If you want to make it smaller, use a smaller pan and just reduce the ingredients--- I'm sure you get the idea. If you have some cooked rice, you can put that in too-- I serve this for large groups and people love it.

Depending on what you want to make and how easy it should be.
When ever my husbands work has pot locks I either make Baked Ziti or a chicken potato bake...
Baked Ziti...
1 lb of cooked ziti
3 cups shredded mozzarella
16 oz of ricotta cheese ( or cottage cheese it works but I dont think it's as good)
2 cups of pasta sauce
mix all ingredients, reserving 1 cup of mozzarella. Preheat oven to 350 degrees. put the mixture in a baking dish and top with the remaining cheese. Bake for about 30 minuted or until cheese on top is melted.
Chicken potato bake...
2 chicken breast cubed
2 cups of cheddar cheese
1 box of potato au graten
1 small package of frozen broccoli
saute chicken till golden
cook au graten potato's according to box directions
add cheese, chicken and broccoli mix well and bake in a 350 degree oven for about 35 to 40 minutes.

This recipe is popular with my family, I make it for Mother's Day and for Christmas Eve. Just throw it in the crock pot, let it cook overnight and plug it in on the warm setting when you get it to the school. Simple and makes a BUNCH! (I'm serving a crowd of 20-30 on any given holiday when I make this...) You can leave out the wine, however it cooks so long that it imparts flavor, not inebriation!
Beef Stroganoff for Crock Pot
Makes a bunch! Tastes great – good for company~
3-lb. beef round steak, 1/2 “ thick
2 t. salt
1/8 t. pepper
½ t.. dry mustard
2 medium onions, cut into pieces & separated
2- 4 oz. cans mushrooms, drained OR ½ -lb. fresh sliced
1 can (10-1/2 oz.) beef broth
¼ c. dry white wine
1-1/2 c. sour cream
¼ c. flour
Hot buttered noodles or white rice
Trim excess fat from steak and cut meat into 3” strips about ½” wide.
Combine ½ c. flour, salt, pepper & dry mustard; toss steak strips to coat thoroughly.
Put coated strips in crock pot; stir in onion pieces and mushrooms.
Add beef broth and wine; stir well.
Cover & cook on low for 8-10 hours.
Before serving, combine sour cream with ¼ c. flour; stir into crock pot.
Serve over hot buttered noodles or rice.

a one pan dish
I make enchilada pie
layer corn tortillas at the bottom of the dish
brown seasoned taco meat ...later on top of tortillas
then i rinse and layer whole black beans on top of that
next i can of drained corn
i can of drained diced tomoatos
i small can of chopped green chili peppers
cover with another layer of tortillas
pour i med. can of enchilada red sauce over that
chedder cheese on top of that
sprinkle chopped olives and green onions as final layer
bake @ 350 for 20 min or until cheese is melted

I like a couple of cans of sardine laid out on top of some romaine lettuce ,onions,cukes,cherry tomatoes,crutons,some green onion tops,fresh spinach all mixed in a bowl that has had it sides rubbed with garlic and extra virgin olive oil .Top this off with some grated romano cheese and drizzle some lemon juice with olive oils as a dressing season with some course black pepper throw in some black olives..

sauted chicken breast and broccoli in garlic butter and serve over angel hair pasta. have alfredo sauce on the side in case some want to scoop a bit over the chicken and broccoli.
