Why is it that the Head Coaches get all the credit for building a program but the actual people who build the program is not even inteviewed.

I think he would make a great NCAA head coach, but as a Gator fan I don't want him to leave Florida. To answer your additional detail, head coaches get all or most of the credit or blame because ultimately it was a decision made by the head coach. Urban will get most of the credit for winning it all.
