That's a very good question. My wife thought that a gingerbread house would be a fun project to do one day before Christmas with our granddaughter, but she didn't mention that nobody in our house likes gingerbread. To make matters worse, it's not just a gingerbread house. It's a gingerbread mansion. We bought it as a kit from Costco, get the picture?
I suggest that you break it up into smaller pieces, & store them in a cookie container. Then you can put them out for guests with coffee later on.
That's what I plan to do with ours.

Take a picture of it. Or a few.
If you can't eat it, compost it. It's not good food for the birds.
Next year, make a brownie house. Or a biscotti house. Or a chocolate chip cookie house. Or a shortbread house.
Oh, and homemade gingerbread is usually much tastier than the stuff that comes in the kits.

I would drill holes in the gingerbread house, then place it outside so it can double for a Motel 6 for birds.

Just cut it to small pieces and throw it in your yard. The birds will have a feast. Another idea is to take it to a lake or pond and feed it to the ducks and fishes. That's what I do with my left over sweet bread.

can you preserve it with something and use it for decoration for years to come? We did a project in elementary school were we made a reindeer out of a dog buscuit. My teacher sprayed something on it to preserve it. Lasted as long as I can remember until we got sick of looking at our old homemade ornaments and revamped the tree.

Traditionally you are supposed to let the children eat it. If you let it just be decoration, it is now stale, germy and full of bacteria. Let the squirrels have it.
