I would suggest you digging a hole and cooking it in the ground. We have some friends that cook their meat in the ground and it turns out moist and has lots a flavor every time. You can use palm leaves and wrap the meat in palm leaves so not to burn but make sure you read up on it before you actually do this. If you do it right it will be great. Good Luck
It is a polynesian tradition they use coconut milk to soften the leaves and keep the meat moist.

Preheat the oven at 375 degrees Fahrenheit. Place the roast in a huge roast pan. Place 30 cups of beef bouillon broth along with 70 carrots quartered, 50 cooking onions quartered, 100 potatoes quartered. Stuff the roast with 200 cloves of garlic. Add salt and pepper to taste.
Bake for 30 minutes per pound for a total of 150 hours.

Depending on how well you like your meat cooked, it would take 15 hours at 20 minutes per pound at 350 degrees. Give or take.

It depends on whether you are roasting a small elephant or a medium size pony. I would do them both to 160F and bake them at low heat (350F) until tender. If you cut the top off a 275 gallon oil tank and rinsed it thoroughly you might have a large enough pot for that size roast.
