ok heres the thing my biyfriend ( whom i live with) works nights.. he usually gets off at 230 home @3 am.. they have changed his hours so now he is home @ 12 am
i cook him dinner everynight and leave for him to heat up.. am running out of idea for dinners... i need easy recipes for groundbeef. he is really picky so i need to keep it simple.
have outdone meatloaf, spaghetti, hamburger helper, stroganoff, sloppy joes.
please help....!!!

why groung beef?? because its what i pulled out of the fridge...
i need somthing easy because i have a 4 month old baby and i need something can cook fast and be done with it... chili is out just made it...the only veg he will eat it is corn. dont have any lasagne noodles.. was looking for something easy but different.
was going to make beef enchiladas but i dnt have enough shells.. whatever i make has to hold up for the next day because he takes leftovers for lunch.

"Meatballs in tomato sauce with melted cheese on a lightly toasted baguette."
INGREDIENTS
1 pound ground beef
3/4 cup bread crumbs
2 teaspoons dried Italian seasoning
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese
1 egg, beaten
1 French baguette
1 tablespoon extra-virgin olive oil
1/2 teaspoon garlic powder
1 pinch salt, or to taste
1 (14 ounce) jar spaghetti sauce
4 slices provolone cheese
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.
While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!

Hamburger Pie
INGREDIENTS
4 potatoes
1 pound lean ground beef
1 onion, chopped
2 (10.75 ounce) cans condensed tomato soup
1 (15 ounce) can green beans, drained
1 cup shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Peel and quarter potatoes, and introduce into boiling water; cook until tender, about 15 minutes. Drain and mash. Set aside.
In a large skillet over medium-high heat, cook ground beef and onion until beef is brown. Drain. Stir in tomato soup and green beans. Pour into a 9x13 baking dish. Mound mashed potatoes in a ring around the meat mixture (do not cover meat). Sprinkle potatoes with shredded cheese.
Bake in preheated oven 30 minutes, until potatoes are golden.

Shepherd's Pie
"This isn't the traditional Shepherd's Pie with lamb, but a quick and easy version my family loves."
INGREDIENTS
5 potatoes, peeled and quartered
1 pound lean ground beef
1 (4 ounce) can sliced mushrooms
1 (15 ounce) can mixed vegetables
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
salt and pepper to taste
3 tablespoons butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
Bring a large pot of salted water to a boil. Cook potatoes in boiling water until tender, about 15 minutes. Drain, reserving some of the cooking liquid. Mash potatoes with a little of the cooking liquid. Set aside.
In a large skillet, cook ground beef until brown over medium-high heat. Drain fat from pan. Stir in mushrooms, mixed vegetables, mushroom soup, celery soup, and salt and pepper; heat through. Pour into prepared baking dish, cover with mashed potatoes, and dot with butter.
Bake in preheated oven for 30 minutes, or until potatoes are golden and beef and vegetable mixture is hot and bubbly.

Sorry I know you said beef but next time you should try this chicken one!

One of my fav dishes to cook is below! Have it! (and I dont cook too often- Im still a novice ) Buy a pack of boneless skinless chicken breasts (purdue are the best) 2 red bell peppers, 2 green bell peppers, a little box of those precut mushrooms or subsitute veggies as you wish. I find this combo tastes the best. Cook the breasts in the skillet in olive oil until almost done, then add the veggies. Let cook for another 5-10 minutes...sprinkle the chicken with shredded cheese. Voila!! :) Then get a bag of Vigo rice (the best ever!) and you have yourself a easy, healthy meal!

I know the feeling, I have a large family and ground beef is so cheap!! Meat Balls, Tacos or Taco salad, chili, stuffed peppers.

Ground Beef and Rice

Cook Time: 40 minutes
Servings: 4

Ingredients

1 lb. ground beef
1 onion chopped
1 clove garlic, minced
4 cups crushed tomatoes
10 oz. frozen spinach thawed
3/4 cup white rice
1 tsp. dill weed
1/4 tsp. pepper

Instructions
In a large skillet, sauté beef, onion and garlic over
medium high heat about 5 minutes, stirring frequently until beef is
browned and crumbly. Drain off excess fat and stir in remaining
ingredients. Bring to a boil and reduce heat to low. Cover and
simmer 30-35 minutes or until rice is tender.

Salisbury steak
1 1/2 pounds ground beef
2 tablespoons grated onion
1 teaspoon salt
1/2 teaspoon dried marjoram leaves, crushed
1/8 teaspoon pepper
1 envelope mushroom gravy mix
1 can (3 to 4 ounces) sliced mushrooms, drained
2 tablespoons red wine, optional
PREPARATION:
Directions for salisbury steak
In a large bowl combine ground beef, grated onion, salt, marjoram, and pepper; mix well. Divide meat into 6 portions; shape into oval patties about 3/4-inch thick.

Broil Salisbury steak 3 inches from heat for 3 to 4 minutes; turn and broil other side of Salisbury steak for about 4 minutes, or until done as desired. Prepare gravy mix as package directs; stir in mushrooms and wine, if using. Heat through. Pour gravy over salisbury steak patties and serve with potatoes. Salisbury steak recipe serves 6.

Spaghetti With Bolognese Sauce

Serves 4
The sauce may be made without pork; just use an additional pound of ground beef.

1 tablespoon olive oil

2 onions, finely chopped (3 cups)

3 carrots, finely chopped (1 cup)

6 garlic cloves, minced

1 pound ground beef

1 pound ground pork

1/4 cup tomato paste

Coarse salt and ground pepper

1 cup dry white wine

1 can (28 ounces) crushed tomatoes in purée

1 cup milk

12 ounces spaghetti

Finely grated Parmesan cheese, for serving

1. Make sauce: In a Dutch oven (or 5-quart saucepan), heat oil over high heat. Add onions, carrots, and garlic; cook, stirring, until slightly softened, about 2 minutes. Add beef and pork; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Stir in tomato paste; cook 1 minute. Season generously with salt and pepper.

2. Add wine and tomatoes. Bring sauce to a simmer; cook, partially covered, stirring occasionally, until thickened, about 1 hour. Add milk; simmer until completely absorbed, about 15 minutes more. Season again with salt and pepper.

3. When sauce is almost done, cook pasta in a pot of boiling salted water until al dente, according to package instructions; drain. Toss pasta with half the meat sauce; save remaining sauce for next day. Serve sprinkled with cheese.

Lemon-olive Meatball Appetizers

1 pound ground beef
3 tablespoons lemon juice
1 teaspoon salt
1 cup cheddar cheese -- grated
12 olives -- minced
1/4 green bell pepper -- chopped fine
1 cup soft bread crumbs
1/2 cup milk
1 egg -- beaten
12 bacon slices -- *see note

Partially cook bacon, keeping it from curling.
Mix all ingredients except bacon. Shape into 12 balls. Wrap a bacon slice around each ball; fasten with a toothpick. Arrange in baking dish. Bake in preheated 350-degree oven for about 40 minutes, turning once or twice.

You could do tacos, burritos, enchiladas, cheeseburgers...Just curious; why just ground beef?

how bout a taco casserole.

layer corn tortilla
hb meat with taco seasoning.
cheese
whatever else he likes
canned chili
tomatoes
black olives
get a can on el paso enchilada sauce pour over the while thing and top with cheese and crushed tortilla chips.
