This is a very broad question to try to answer sucinctly.
Pilgrimage was an important part of medieval life. Usually it was not an event (like say, Woodstock, in the modern era); instead, there were permanent places of pilgrimage that people would try to go to. The most important one of these was Mount Calvary in Jerusalem (the movie, "Kingdom of Heaven" does a good job portraying that in the side plot that has Baleon visit the Mount). Rome and San Giacomo in Compostelo (Spain) were the other two of the "Big Three" pilgrimmage sites of the middle ages.
Additionally, there were plenty of local shrines in the various European countries that were considered worthy of pilgrimmage. Canterbury Cathedral, in England, is one example these.
Pilgrimmage road sprang up throughout Europe. These were probably best defined and most travelled in the 12-14th centuries, before the Black Death stopped a lot of travel. Pilgrims would meet up with other pilgrims on the road and travel together to a mutual destination. They would carry only a staff (walking stick) and a bag known as a "pannier" or a "pilgrim scrip". It was big enough to carry bread for a day or two. Along the way, various monestaries would keep rooms avaliable for pilgrims to rest in. A pilgrim who showed up at a monestary would also be fed the noon-day meal. Other than that, pilgrims expected, and were expected, to forage for their own food or depend on the kindness of strangers.
Once a pilgrim sucessfully completed a pilgrimage, they were entitled to wear a token showing that: A Cross for a pilgrimage to Jerusalem, a Key for a pilgrimage to Rome, a Shell for a pilgrimage to Compostelo. Other shrines had their own pilgrim badges, often silver or pewter pendants carved or stamped with the image of the saint associated with the shrine, or a symbol that represented them.
