If you have cornstarch, make a slurry, about half a cup by dissolving 2T of cornstarch and a half cup of water. Salvage your pudding and heat it up in a small pot and add slurry, and stir until a little thick. Then chill.
You MUST heat the cornstarch, if you're going to thicken it. If you don't you're still left with a mess.

Xanthan Gum is the answer!
I used Bob's Red Mill brand - avail in most grocery stores, not just specialty. It's not only GF (Gluten Free,) but GF And VEGAN (extracted from bacterium, so no animals hurt/maimed or used up/ killed to make it. YAY!) You could always use a combo of puréed tofu with less of the gum too. Xanthan directions below.
Add a little gum at a time, blending until u get desired consistency. I just saved a thin soy milk pudding pie with it. Very thick now, I'll tell ya! Next time I'll try blending the gum/tofu with soy milk or water before combining the pudding mix into it.
NOTE: You also really have to watch for "Natural flavor" and fragrance in labels too. That "perfume" or "fragrance" and "natural" or "vanilla" flavor is derived from cut out, murdered beaver crap glands. Nothing vanilla or nice smelling about any of that...Yuck, it's completely disgusting morally and physically!

Once you've added the soy or almond milk, you must use cornstarch or other powdered thickener and heat it. But, if you've not mixed it all in yet, you just add half the amount of required liquid - or even less! - and it'll work.

are you sure you whipped it up enough? i never had a problem using soymilk. hmmm.
i guess at this point you can blend in some cornstarch (a heaping tablespoon) and cook it until it thickens

I think if you put it in the fridge then it will get thick. It might not be fast but it works.
