Ok heres the answer your looking for. The pig and the apple. its like peanut butter and jelly or wine and cheese or bert and ernie.
Pig is a fattie food. fatness is rich it needs a counter part something to balance it. well the apple is tart and it cuts the fat
peanut butter is fatty jelly cuts its fatiness same for cheese and wine. its the basic balance to a flavor profile
