CHICKEN AND BROCCOLI CASSEROLE

5 to 6 chicken breasts
1 to 2 pkgs. frozen broccoli
1 can cream of chicken soup
1 tbsp. lemon juice
1 can cream of mushroom soup
1/4 c. mayonnaise
1/3 c. butter
6 oz. grated cheese (any type)
Bread crumbs to cover top of casserole

Cook chicken until tender. Cool - take meat from bone and cube. Cook broccoli until done - heat together soups - lemon juice, mayonnaise and butter. Layer the chicken, broccoli and soup mixture in buttered casserole dish. Top with grated cheese and bread crumbs. Bake at 350 degrees for 30 minutes.

5 c (4-6) Cooked Chicen/Turkey,
Coarsely diced
6 tb Butter or margerine
6 tb Flour
2 ts Salt
1/4 ts Pepper
3 c Milk
1/2 c Mayonnaise
1 t Lemon juice
1 c Cheddar cheese, grated
2 tb Butter or margerine
1/2 c Bread crumbs

1. Layer broccoli on bottom of greased 9x13" baking dish. Layer
chicken or turkey over broccoli 2. In a saucepan, melt the 6 tb butter.
Stir in the flour, salt &
pepper. Gradually stir in the milk and continue until the white
sauce is smooth and comes to a boil. Remove from heat. 3. Combine
mayonnaise and lemon juice with white sauce and pour over
chicken and broccoli. Sprinkle with cheese. 4. Melt 2 Tb butter. Stir
in bread crumbs and sprinkle over casserole. 5. Bake at 350F for 35-40
minutes.

Broccoli Casserole
1 1/2 cups hot water
2 cups diced chicken
1 pkg (6oz) Stove Top Stuffing for Turkey
3 tbsp Butter
1 pkg frozen broccoli, thawed
1 can (10 3/4oz) condensed cheddar cheese soup
3/4 cup milk

Preheat oven 350 degrees. Mix hot water and butter in large bowl til butter is melted. Add stuffing mix; stir just until moistened. Set aside.
Put broccoli and chicken in a 2qt. casserole dish or 9x13 baking pan. Mix soup and milk until well blended; pour over broccoli. Top with stuffing. Bake for 30 mins or until heated through. Make 6 servings.

2 lg. chicken breasts, cooked and cut up
10 oz. chopped broccoli, thawed
1 can cream of chicken soup
1/2 can milk
1/2 c. mayonnaise
1/8 tsp. curry powder
8 oz. sharp cheese, grated

Put broccoli on bottom of casserole dish; put cut up chicken over broccoli. Put next 4 ingredients plus 5 ounces of cheese in bowl; heat in microwave. Pour over chicken.

Sprinkle remaining cheese over casserole. Heat until hot and bubbly, around 1/2 hour. Place under broiler until golden on top. Cook in 350 degree oven.

INGREDIENTS:
2 cups uncooked rainbow spiral pasta
2 cups frozen broccoli flowerets
1 cup light sour cream
2 teaspoons all-purpose flour
1/2 cup milk
1 1/2 cups diced cooked chicken breast
3/4 teaspoon dried basil leaves
4 1/2 ounces sliced mushrooms
4 tablespoons grated Parmesan cheese
PREPARATION:
In large saucepan or Dutch oven, cook spiral pasta or similar pasta according to package directions, adding broccoli during last 5 minutes of cooking time. Meanwhile, in medium saucepan, combine sour cream and flour; blend well.
Stir in milk; cook over medium heat, stirring constantly, until hot but not boiling. Stir in chicken, basil, mushrooms and 3 tablespoons of the cheese. Cook until heated through. Drain pasta and broccoli; return to saucepan. Add chicken mixture; toss gently to coat. Place pasta mixture in a serving dish and sprinkle with remaining 1 tablespoon of Parmesan cheese, and pass the Parmesan cheese at the table.
