350 degrees. For a 1 1/2 - 2 pound meatloaf, it will take about an hour. It's a good idea to drain off the fat about halfway through the cooking time.

MEATLOAF baked in MICROWAVE on High power
1/4 cup chopped celery
1/4 cup chopped onion
1 1/2 lb hamburger beef
2 eggs
3/4 cup bread crumbs
1 cup tomato juice-- I use mild salsa(Tostito)
3/4 tsp salt
1/2 tsp pepper Adjust the spices to your own taste
1/2 tsp garlic powder
1 tsp dry mustard
Mix all ingredients. Coat two glass Pyrex pie plates with olive oil
Shape meat mixture into small loaves and put into Pyrex microwavable pie plates. Cover with wax paper & bake
in micro for 8 minutes turning twice. pour excess juices from pie plate into cup and save.Then bake 8 more minutes after coating top of loaves with about 3 tablespoons of ketchup.
Very moist meatlof. Can be frozen for later meals

Sweet and Sour Meatloaf

Ingredients

(6 servings)

8 oz Tomato sauce (1 can)
1/4 c Brown sugar
1/4 c Vinegar
1 ts Mustard
2 lb Ground beef
1 c Sliced mushrooms
1 Egg, slightly beaten
1 small can of water chestnuts, chopped
1/4 c Onion, minced
1/4 c Crushed crackers
1 ts Salt
1/4 ts Pepper

Instructions

Combine first 4 ingredients to make sauce. Combine remaining ingredients, kneading together with hands. Add 1/2 tomato sauce mixture. Put in loaf pan. Pour remaining sauce over loaf. Bake at 400 degrees for 45 minutes.

Mom’s Meatloaf

1 egg
2 tsp salt
3/4 cup chopped celery
1 finely chopped onion (I grate it)
1 tsp sage
1 pkg. dry onion soup mix
1 Tbsp chopped parsley (I used dried)
1/4 cup ketchup, plus more for top
1 can cream of mushroom or celery soup
2 lbs ground meat (1 1/2 lbs lean beef and 1/2 lb lean pork)
3 cups Bran Flakes cereal, slightly crushed

Blend all ingredients adding meat and cereal flakes last. Pack into a 9x5x3 loaf pan shaping into loaf. Spread top with ketchup. Bake at 375ºF for about an hour and a half. If top starts to get dark cover lightly with foil to prevent burning.

ground beef mixed with about 1/2 C. to 3/4 C. of Bread crumbs and 1 Large egg, shape it in a loaf like or put in a bread pan if want shape perfectly loaf like, and spread some ketchup on top to keep the moist inside the meat while cooking also gives flavor.

I bake mine at 350 for 50-60 minutes so that it will be cooked fully, but still nice and juicy. Don't forget to let it sit before cutting so the juices don't pour out of it!

Meatloaf:

1¾ hours 10 min prep
6 servings

2 eggs
3/4 cup milk
1/2 cup fine dry breadcrumbs
1/4 cup finely chopped onions
2 teaspoons parsley
1 teaspoon salt
1/8 teaspoon ground pepper
1/2 teaspoon ground sage
1 teaspoon worcestershire sauce
1 teaspoon chili powder
2 teaspoons garlic powder
1 1/2 lbs lean ground beef
1/4 cup catsup
2 teaspoons brown sugar
1 teaspoon dry mustard or prepared mustard

1. Combine eggs, milk, and Worcestershire.
2. Stir in crumbs, onion, parsley, salt, pepper, sage, chili powder, and garlic powder.
3. Add beef and mix well using wet hands.
4. Place mixture in a 8x4x2 inch loaf pan.
5. Bake in a 350F oven for 1 1/4 hours.
6. Drain off any excess fat.
7. Mix together catsup, brown sugar, and mustard.
8. Spread over meat.
9. Return to oven for 10 minutes.
