this might be crazy, but you are in the world of great cheese, why worry about colby and jack? Are you in the miliatary, if so the base should carry it. When I lived in europe, I wanted to go on a cheese city tour (all the cities in europe with cheese names). Wouldn't that be a fun tour?!?!?!?

A mild cheddar for the colby. For the jack, you can try either muenster or asedero. Both are white cheeses that melt really well. You can get them at the grocery or deli.

For the colby, try locatelli. I belive its an italian cheese. It tastes a bit like very sharp parmesean, so use spearingly. For the jack.. well, try gureare. You'll have to forgive my spelling on that one. Its a tasty mild cheese, but its a bit oily. Good luck!

You can replace Colby with any cheddar, just taste it first to see if it's too mild or too sharp. Jack is harder. You could try a Provelone and add some minced jalapeno, serrano or red pepper flakes to get close.

mild cheddar....you could also use a edam as you are in europe.....any mild cheese will do as colby is a bit bland .....ask the cheese vendor about the local cheese that is not to strong.....
