Banana pancakes are one of our favs

Add 1 ripe mashed banana to prepared mix & a dash of cinnomon. Walnut optional Cook as usual and enjoy

I think that the pancake mix makes a big difference. My mom bought me this one kind of mix that was awesome. It is Carbon's Golden Malted Pancake mix. You can buy it at Cosco World Market and it comes in Regular, Blueberry, and Pumpkin(my favorite). If you cannot find this kind use a kind that makes you add eggs, the ones where you only add water do not taste as good in my opinion.

I think Maple Grove Farms Buttermilk & Honey pancake mix is very good. It is sold at most grocery stores and is much better than Bisquick, Aunt Jemima or any other mainstream, bland white dough pancake mixes you will find. Where it says on back of box to use vegetable oil I substitue melted butter and it makes them much tastier.

Chocolate Chip Pancakes

1 1/4 cups flour
1 tablespoon sugar
1/4 teaspoon cinnamon
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
4 tablespoons melted butter
3/4 teaspoon vanilla
1 cup chocolate chips

Preheat fry pan (griddle or skillet for Americans).
Combine flour, sugar, cinnamon, baking powder and salt in a large bowl.
Mix together wet ingredients and beat into dry mixture until smooth.
Fold in chocolate chips.
Pour or spoon batter into fry pan in desired quantity.
Flip when top begins to bubble, then cook a minute more.


Almond Pancake Mix

3 cups non-fat powdered milk
2 1/2 cups all-purpose flour
1 cup whole-wheat flour
1 cup finely ground almonds
2/3 cup baking powder
1/3 cup granulated sugar
1 tablespoon salt

In large bowl, stir all ingredients together till well blended.Store in a reseable bag.
Yield 7 1/2 cups pancake mix.enough for 3 batches of pancakes.
INSTRUCTIONS FOR ALMOND PANCAKES:.
2 1/2 cups pancake mix.
1 1/4 cup water.
1 large egg.
2 tbls vegetable oil.
In medium bowl, combine all ingredients and stir just till moistened.
Heat a greased griddle over medium heat.
For each panccake, pour 1/4 cup batter onto griddle.and cook till top if full of bubbles and underside is golden.
Turn and cook other side till golden brown.
Regrease griddle as necessary.
Yield 12 5" pancakes.per recipe.and total of 7 1/2 cups pancake mix -- .

Caramel Pancake Syrup

2 tablespoons butter or margarine or any butter substitute (i use butter)
1/2 cup brown sugar
1/4 cup water

Melt butter on med-low heat.
Add Brown Sugar and mix together till it becomes moist and sticky.
Add water and stir till all the sugar is dissolved and mixture is boiling.
No specific amount of heating time is required but I usually boil mine for about 1-2 minutes.

make sure ur battar has plenty of liquid! pour them to a size that leaves some space in skillet. when u see bubbles near the edges of pancake it is ok to flip it over. I always use an electric mixer to get all lumps out of battar. makes them light & fluffy.

Apple Blintz Pancakes:

1 cup pancake mix
1 egg
1/4 cup cottage cheese
1 cup whole milk
1 tablespoon vegetable oil
3/4 cup sour cream
1 cup applesauce
2 teaspoons ground cinnamon (optional)

Place the pancake mix in a large bowl. In another bowl, whisk together the egg, cottage cheese, milk, oil, and ¼ cup of the sour cream. Stir the wet ingredients into the pancake mix and whisk just to combine. Let the batter rest according to the pancake-mix label directions (or for 5 minutes if you make your own mix). Place a nonstick griddle or skillet coated with oil, butter, or cooking spray over medium-high heat. Spoon or pour about 1/3 cup of batter for each pancake onto the griddle. Turn when bubbles rise to the surface and the edges look cooked. Repeat with the remaining batter. Before serving, spoon 1 tablespoon of the applesauce onto one half of each pancake; fold in half and top with some of the remaining sour cream. Sprinkle with cinnamon (if desired).

Yield: Makes 10 to 12 pancakes

Put some chopped walnuts and a bit of canned pumpkin and a dash of nutmeg in the batter. Sounds weird but it's Delicious!

add about a teaspoon of lemon juice to your batter

lemon juice helps to make them fluffy
