SWEDISH MEATBALL RECIPE:
3 Tablespoons butter
1 medium onion, chopped
3/4 cup light cream
3/4 cup water
3/4 cup bread crumbs
1 1/2 lbs. ground chuck
1/2 lb. ground pork
2 eggs, beaten
1 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon allspice
dash cloves
In a small frying pan, saute onion in 1 tablespoon butter until tender. In large bowl, combine cream, water, bread crumbs. Add onion, ground meats, eggs and all spices. Shape into 3/4 to 1-inch diameter meatballs.
In a large frying pan, melt 2 tablespoons butter; add meatballs and brown thoroughly. Remove meatballs from pan; save 2 Tablespoons of drippings.
SAUCE:
2 Tablespoons flour
1/2 cup light cream
1 1/2 cups water
1 teaspoon salt
dash pepper
1/2 teaspoon gravy seasoning
In the drippings, stir in flour. Gradually stir in cream and water and bring to a boil. Add spices and gravy seasoning. Add meatballs to sauce and heat 5 to 10 minutes and serve.

£¥£$ Chocolate Cake
INGREDIENTS
1 cup butter
2 cups white sugar
2 eggs
1 cup buttermilk
1/2 cup unsweetened cocoa powder
2 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup water
DIRECTIONS
1)Preheat oven to 350 degrees F (175 degrees C). If using layers, grease and line the pans with parchment paper. If using a 9 X 13 pan, grease and dust with cocoa powder. Sift together the cocoa, flour, baking soda and salt. Set aside.
2)In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Alternately beat in the flour mixture and the buttermilk, mixing just until incorporated. Add the boiling water and beat for one full minute.
3)Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Teriyaki Salmon
In shallow pie plate, combine 3 tbsp. soy sauce and 2 tsp. each brown sugar, oil, ketchup, and rice vinegar. Add four 8-oz. salmon steaks and marinate 1 hour. Place salmon on baking sheet, spoon marinade over, and bake at 500 degF. for 10 minutes or until medium-rare. Serves 4.
Prosciutto & Melon with Honey-Lemon Dressing
Halve and seed 1 cantaloupe (23/4 pounds). Cut into 12 wedges. Drape each wedge with a thin slice of prosciutto using about 1/4 lb. total.Whisk 1/3 cup honey with 1/4 cup lemon juice. Serve wedges with the lemon sauce. Serves 4.
Deli-Style Potato Salad
In large bowl, combine 1/3 cup plain nonfat yogurt, 1/4 cup light mayonnaise, 1/4 cup chicken broth, 3 tbsp. red wine vinegar, 4 sliced scallions, 1/2 tsp. salt, and 1/2 tsp. pepper. In large pot of boilling water, cook 2 lbs. quartered small red potatoes until tender. Drain. Add to bowl and toss. Serves 4.

I Fajitas
Add spice to the dinner table with this fajita recipe.
Ingredients
4 cloves Garlic, minced
4 tb Fresh lime juice
1 tb Oil
3/4 tsp Salt
1/2 tsp Black pepper
1 tsp Crushed red pepper flakes
1 1/2 lb Skirt steak, cut in 3 inch strips
6 Large flour tortillas
2 cups Iceberg lettuce, finely shredded
6 Thin slices of red onion
Salsa
Preparation
Comine garlic, lime juice, oil, salt, pepper and crushed red pepper flakes in small bowl. Put steak in non-aluminum pan or bowl and pour marinade over. Cover with plastic and refrigerate 12 to 24 hours.
Preheat broiler or grill. When fire or oven is ready, wipe marinade off meat and grill or broil until done, 2 to 3 minutes per side for medium-rare. While meat is cooking, warm tortillas on the grill or by wrapping them in aluminum foil and placing in oven for 5 minutes.
Place steak on warmed tortillas, and serve with lettuce, red onions and salsa.

II Vodka Sauce
This is a great recipe for those who love spicy food. If not, simply omit the crushed red pepper. This recipe will have your family eating the leftovers out of the refrigerator. A piece of advice: use the best vodka you can - it really makes a big difference! Serve with pasta, and garnish with grated Parmesan cheese."
1 cup vodka
1 teaspoon crushed red pepper flakes
2 tablespoons olive oil
3/4 pound prosciutto, chopped
1 large clove garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
salt and pepper to taste
1 (28 ounce) can roma tomatoes, with juice
2 (8 ounce) cans tomato sauce
1 cup heavy cream
DIRECTIONS
In a small bowl, combine vodka and red pepper flakes. Set aside for 1 hour.
Heat olive oil in a large skillet over medium heat. Saute prosciutto, garlic, parsley, basil, salt and pepper until prosciutto is evenly brown. Pour in vodka mixture, and simmer 10 minutes. Crush tomatoes, and stir in with 2 cans of tomato sauce, and 1 (8 ounce) can water. Simmer 15 minutes. Stir in 1 cup heavy cream, and cook 2 minutes.
