Gluten is an elastic type of protein found in wheat. It is what gives bread dough its stretchy nature.

Yes, you can eat gluten free even if you aren't gluten sensitive. Many people avoid white flour to lose weight. White flour has no fiber to it, so you are better off eating more raw vegetables instead of grains (corn is a grain, not a vegetable). If you do this it is likely that you will lose weight.
