I left half an onion in my fridge for three weeks over winter break. When I came back, it had sprouted two stong stems.

Yep. Potatoes do the same thing.

Put in in the ground baby, you're a gardener!

Yes, I have had an onion spout in my fridge. It has to be in the fridge as you found out a couple of weeks. The onion is still good to eat.

Oh yea...many times. Potatoes in the cubard sprout roots.
My wife hates it because I keep my Nightcrawlers in the frige and they stay alive,.

I had one do that. It must've been just the right climate, darkness, etc. for it to sprout.
