Cut upsome fruits.
Mix some raisins or nuts in with the fruit.
Mix in some yogurt

Aside from lettuce, tomatoes, and onions. You can also add shreaded carrot, raisins, bell pepper, cucumbers, jalepenos etc.

Just buy one of those packaged salads
Drizzle some olive oil and red wine vinegar on top

Smoothies are always a good option (aside from veggies).
You can pretty much mix anything into a smoothie and it will tase good.
I reccomend the following base items:
PLAIN unsweetened unflavored yogurt. (use about half the cup for a normal sized blender).
Skim Milk.
Whey protien powder, and flaxseed powder (for a dose of whey protien and omega 3 found in flaxseed) You won't taste it don't worry.
Oatmeal- again, sounds nasty but you don't taste it. you can pre-cook it with hot water or just dump the raw oatmeal in- it just gets ground up anyway.
Other ingredients:
Berries, add blue, black, rasperries or strawberries.
all natural peanut butter.
Almonds or peanuts.
sunflower or pumpkin seeds.
Be carefull about adding banannas, they have a very very strong flavor and can easily overpower the rest of the smoothie.
But a veggie juicer and you can add veggie juices into it or just have veggie juice mix.
If you want thicker consistency add more ice, if you want less, add less ice.

TUNA PITA
Tuna
Olive oil and lemon (or red wine vinegar)
Chopped celery, carrots and red onion
Bean sprouts
Mix this all together in a tupperware
Wrap a whole wheat pita and fill it with the tuna when ready
