My new oven has a "speed bake" setting. I'm sure it means you reduce cooking time, like you would with a convection oven, but not sure if it basically means the same thing. Anyone have one like that and knows what it means? Thanks

conventional oven - has burners that heat the air in the oven

convection oven - has burners also, but has a fan that circulates the air. So the temp is constant and not hot and cold spots in oven

Speed oven is usually means the temp is brought up rapidly and can some times over heat (burn) what you are cooking

There are all kinds of ovens and combination ovens these days.

As mentioned, a regular oven has exposed coils which create the heat. A convection oven has no exposed coils, and it's heat is blown around by an unseen fan which both keeps the temperature very even throughout the oven cavity, but also cooks foods about 1/3 faster.
You probably know about microwave ovens, and there are some new and very expensive ovens that cook with halogen light, etc.

But, there are also now many ovens that combine two (or more?) of the oven types... e.g., microwave + conventional or toaster oven... or microwave + convection.

Your speed bake *may* just be a term for using a combination method when cooking your food, or it may mean just using convection or microwave method because each is faster than conventional.

Look up your unit (brand and model number online... you should find lots of info on what exactly it does and how it defines things there if you don't have your owner's manual).

Convection ovens heat air that is then circulated in the oven by an embedded high temperature fan. By moving heated air past the food, convection ovens can operate at a lower temperature than a standard conventional oven and they can cook food more quickly. A convection oven uses convection currents to heat the food. Convection ovens also generally do not have "hot spots" and thus cook more evenly. With a convection oven there will be about a 25 to 30% reduction in cooking temperature and a 21% reduction in cooking time, compared to a conventional oven

I have a Frigidaire oven that has the Speed Bake option- This actually uses a fan to circulate the oven's heat uniformly. Reading your manual is the determining factor.
