Soak your bananas in a little pineapple juice before adding them to the pudding. The acidity in the juice will stop the browning process and the pineapple flavor won't detract from the banana flavor of the pudding

~~~tossing the sliced bananas in a about 1/2 tsp will help prevent bananas from turning brown in the pudding. With just a little lemon juice, it shouldnt taste lemony at all.

there is no really good way of keeping banana's ripe in a pudding...
usually i cover it with foil and put it in a cold fridge coz that will slow the browning process down!
